Basil Citrus Marinade:
- ½ cup olive oil
- 1/3 cup Nakano Citrus Seasoned Rice Vinegar
- 2 tablespoons honey
- ¼ teaspoon black pepper
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh basil leaves
Chicken and Stuffing:
- 4 (6 oz each) uncooked boneless, skinless chicken breasts (1 ½ lbs total)
- 4 oz goat cheese, softened to room temperature
- 1 tablespoon sliced fresh basil
- 6 dried apricots, chopped
Instructions

Combine all of the marinade ingredients (olive oil, Nakano Citrus Seasoned Rice Vinegar, honey, black pepper, lemon juice, chopped fresh basil leaves) in a blender. Blend until all ingredients are well combined and the marinade has a smooth consistency. Transfer the blended marinade to a gallon-sized Ziploc bag and set aside.

Place the chicken breasts on a clean cutting board. Using a sharp knife, carefully slice each breast horizontally from the thicker side, almost all the way through, creating a pocket (like butterflying a cutlet). This is done before marinating to avoid dealing with slippery chicken. Add the prepared chicken breasts to the Ziploc bag with the marinade and seal. Gently massage the chicken through the bag to ensure each breast is evenly coated with the flavorful marinade. Place the bag in your refrigerator and allow the chicken to marinate for a minimum of 6 hours, up to 10 hours, turning the bag once or twice if possible to ensure uniform marination.

When the chicken has finished marinating, pre-heat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup. Carefully remove the chicken breasts from the marinade, allowing any excess to drip off, and transfer them to the prepared baking sheet. Open each butterflied breast at the slit. Spread approximately one ounce of the softened goat cheese across the bottom inside surface of each breast. Evenly sprinkle the sliced fresh basil over the goat cheese in each breast, then follow with the chopped dried apricots. Gently close the breast, folding the top half back over the apricots and cheese, securing the filling inside.

Place the baking sheet containing the stuffed chicken breasts into the pre-heated oven. Bake for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The chicken should be golden brown and the stuffing warm and creamy.
