- 14.75 oz can of creamed corn
- 3 egg whites
- ¾ cup shredded 2% cheddar cheese
- ½ teaspoon paprika
- 2 scallions, chopped
- ¼ cup chopped onion
- 1 ½ teaspoons salt
- 1 teaspoon baking powder
- 1 ½ cups white whole wheat flour
Instructions
- Preheat the oven to 400°F (200°C). Lightly mist your mini muffin tins with cooking spray.
- In a large bowl, combine all ingredients except the baking powder and flour. Stir well to combine everything evenly.
- Once mixed, add the flour and baking powder to the bowl. Continue to stir until all ingredients are just combined and no dry streaks of flour remain. Be careful not to overmix.
- Using a tablespoon, scoop heaping tablespoons of the mixture into each space in the mini muffin tin. This recipe yields approximately 40 cornballs, so you may need to bake more than one batch depending on the size of your muffin tin.
