  • 1 large egg
  • cup plain breadcrumbs
  • 2 tablespoons grated Parmesan cheese, the kind in the shaker
  • 1 tablespoon Italian seasoning
  • 2 teaspoons dried minced onion, (found by the spices, also sometimes called chopped onion)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • ½ lb (8 oz) 95% lean ground beef
  • ½ lb (8 oz) 99% lean ground turkey breast
  • 1 ¼ cups pasta sauce, (I used Mid’s Meatless Pasta Sauce)
  • 5 light hot dog buns, (I used Schmidt 647 long rolls)
  • 10 tablespoons shredded 2% Mozzarella cheese

Instructions

 

  • Preheat the oven to 400 degrees Fahrenheit (200°C) and line a sheet pan with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the egg, breadcrumbs, Parmesan cheese, Italian seasoning, dried minced onion (or chopped onion), garlic powder, salt, pepper, and water. Stir these ingredients thoroughly with a fork until they are well combined. Add both the ground beef and ground turkey to the bowl. Use clean hands to gently mix everything together until just combined, being careful not to overmix, which can lead to tough meatballs.
  • On a clean, dry surface (such as a large cutting board), separate your meat mixture into 15 equal portions. To prevent sticking and make rolling easier, wet your hands slightly or spray them with a bit of cooking spray. Roll each small portion of meat into a uniform ball. Arrange the meatballs in a single layer on the prepared baking sheet. Place the baking sheet into the preheated oven and bake for 15-20 minutes, or until the meatballs are cooked through and browned.
  • Approximately 5 minutes before the meatballs are expected to finish baking, pour the pasta sauce into a medium saucepan and cover it with a lid. Place the saucepan on a burner over medium-low heat. If the sauce begins to bubble too vigorously, reduce the heat to low. Stir the sauce occasionally to prevent sticking and ensure even heating.
  • Once the meatballs are fully cooked, carefully transfer them into the warm pasta sauce. You can either combine all the meatballs and sauce together, or if you prefer precise portioning, you can separate out ¼ cup of sauce for every 3 meatballs, as each sub will receive this amount. Next, adjust your oven rack to the highest position and switch the oven setting to broil.
  • Remove the used parchment paper from your sheet pan and replace it with a fresh sheet of aluminum foil. Place your opened light hot dog buns onto the prepared baking sheet. Evenly distribute the sauced meatballs, placing 3 meatballs covered in ¼ cup of sauce into each bun. Sprinkle 2 tablespoons of shredded Mozzarella cheese over the top of the meatballs on each sub. Carefully place the pan under the preheated broiler. Broil for approximately 2 minutes*, or until the cheese is beautifully melted and bubbly, and the tops of the buns are lightly toasted to perfection. *It’s crucial to keep a very close eye on the subs while they are under the broiler, as they can go from golden and toasted to blackened very quickly due to the intense heat!
