Ingredients

  • 1/3 cup unseasoned bread crumbs
  • 2 egg whites
  • 2 tablespoons flour
  • ¼ teaspoon black pepper
  • 4 (4 oz each) raw boneless, skinless chicken breast cutlets, (1 lb total)
  • 1/3 cup Buffalo wing sauce, I used Anchor Bar brand
  • 6 low carb high fiber tortillas, (I used La Tortilla Factory’s Smart & Delicious Low Carb, High Fiber)
  • 9 tablespoons light blue cheese dressing, I used Marie’s Light Chunky Blue Cheese – my favorite!
  • Lettuce, chopped (I used Romaine)
  • 2 medium carrots, shredded with a vegetable peeler
  • Optional: additional wing sauce for drizzling

Instructions

 

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. Spread the bread crumbs across the bottom of a large dry skillet and place over medium heat. Cook for a few minutes, stirring every minute or so, until the crumbs are lightly browned and toasted. Remove from heat.
  3. In a shallow bowl, lightly beat the 2 egg whites. Place the toasted bread crumbs on a separate shallow bowl or plate. Pour the Buffalo wing sauce into a third shallow dish. Set all three aside as your breading station.
  4. Combine the flour and black pepper in a large Ziploc bag. Add the chicken breasts to the bag and seal it shut. Shake vigorously until the chicken breasts are fully and evenly coated with the flour mixture.
  5. Take one floured chicken breast and dip it completely in the egg whites, ensuring all sides are coated. Next, press the chicken into the toasted bread crumbs, flipping it to coat both sides thoroughly. Finally, dip the breaded breast into the Buffalo wing sauce, coating both sides to infuse it with flavor. Place the fully coated breast onto the prepared baking sheet. Repeat this process with the remaining chicken breasts.
  6. Bake for approximately 12 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Remove the chicken from the oven and slice it into convenient strips.
  7. To make the tortillas more pliable, warm them slightly in the microwave for about a minute. Spread 1 ½ tablespoons of light blue cheese dressing across the center of each tortilla. Divide the cooked chicken strips evenly among the tortillas. If desired, drizzle a little extra wing sauce over the chicken for an added kick. Top the chicken with chopped lettuce and shredded carrots. Fold the ends of the tortilla in, then fold the sides over to create a wrap. Cut each wrap in half, and use toothpicks to secure them in place if needed.
