- Versatile & Adaptable: While our chosen berry mix is perfect, the beauty of this recipe lies in its flexibility. Feel free to incorporate blackberries, rhubarb, or any other fruit you adore in your pies.
- Crispy, Yet Tender Texture: The wonton wrapper bakes into a delicate, crispy shell that perfectly contrasts with the warm, gooey berry filling, creating an exquisite textural experience in every bite.
The Simple Magic Behind Wonton Wrappers
The secret to the incredible speed and unique texture of these mini tarts lies in a humble ingredient: wonton wrappers. Often found in the refrigerated produce section of your grocery store, these thin, pliable dough squares are typically used for making dumplings or fried wontons. However, they transform into an unexpectedly perfect, light, and crispy crust when baked in a muffin tin. They eliminate the need for making traditional pie crusts from scratch, saving you significant time and effort while delivering a fantastic result.
A Symphony of Berries: Choosing Your Perfect Mix
Our recipe highlights a delightful trio: sweet strawberries, slightly tart raspberries, and juicy blueberries. This combination offers a balanced flavor profile and a vibrant visual appeal. However, don’t limit yourself! These tarts are wonderfully adaptable to your favorite berry combinations or what’s in season. Consider adding:
- Blackberries: For a deeper, richer berry flavor.
- Rhubarb: If you enjoy a tart kick, especially when paired with sweeter berries.
- Cherries: Pit and halve them for a delightful twist.
- Mixed Frozen Berries: If fresh berries aren’t available, a good quality frozen mixed berry blend works perfectly. Just ensure they are thawed and drained slightly before use to prevent excess moisture.
Berries are also packed with antioxidants and vitamins, making these tarts not just tasty but also a little boost for your well-being!

- 1 cup blueberries: Sweet and juicy, they burst in your mouth.

Step-by-Step Guide to Baking Perfection
Follow these simple instructions to create your own batch of irresistible Mixed Berry Mini Tarts:
Instructions:
- Prepare Your Baking Setup: Begin by pre-heating your oven to 350°F (175°C). While the oven heats, take a mini-muffin tin and lightly mist all 24 cups with cooking spray. This step is crucial for preventing sticking and ensuring easy removal of your finished tarts. Set the prepared tin aside.
- Crafting the Crispy Wonton Shells: Lay out your wonton wrappers on a clean, dry surface, such as a cutting sheet or parchment paper. Lightly mist the tops of the wrappers with cooking spray. Then, sprinkle half of the powdered sugar evenly over them. Carefully flip each wrapper over and mist the other side with cooking spray. Sprinkle the remaining powdered sugar on this side, ensuring both sides are coated for maximum crispiness and a hint of sweetness. Gently press each sugared wonton wrapper into a cup of your mini muffin tray, shaping it to form a cup. Bake these wonton cups in the preheated oven for 8 minutes, or until they turn a beautiful golden brown and are satisfyingly crispy.
- Developing the Luscious Berry Filling: While your wonton cups are baking, you can simultaneously prepare the berry filling. In a medium saucepan, bring the light butter to medium heat until it’s fully melted. Add your diced strawberries, raspberries, and blueberries to the melted butter and stir to ensure all the berries are coated. Cook the berries uncovered for about 5 minutes, stirring occasionally, allowing them to soften slightly and release their juices. In a separate small dish, combine the corn starch with the hot water, stirring thoroughly until you have a smooth, lump-free slurry. Pour the granulated sugar and the corn starch slurry over the berries in the saucepan and stir well to combine. Place the cover on your saucepan. Once the mixture starts bubbling (which should happen quickly), reduce the heat to low and let it simmer for 3-5 minutes, or until the filling visibly thickens to a beautiful, gooey consistency.
- Assembling and Final Bake: Once your wonton cups are crispy and the berry filling is thick and ready, spoon the warm berry mixture evenly into each baked wonton cup. Return the filled mini tarts to the oven for an additional 3-5 minutes. This final short bake allows the flavors to meld beautifully and warms the filling through.
Expert Tips for Flawless Mini Berry Tarts
To ensure your Mixed Berry Mini Tarts turn out perfect every time, keep these expert tips in mind:
- Don’t Overfill the Wontons: While tempting, overfilling can lead to spills and a less crispy crust. Stick to about a tablespoon of filling per tart for the best results.
- Achieving Ultimate Crispy Shells: Ensure you mist both sides of the wonton wrappers thoroughly with cooking spray and bake them until they are truly golden and firm. A slightly under-baked wonton will be chewy rather than crispy.
- Adjust Sweetness to Taste: The sweetness of berries can vary. Taste your berry mixture before adding the corn starch slurry and adjust the granulated sugar if your berries are particularly tart or sweet.
- Fresh vs. Frozen Berries: If using frozen berries, thaw them completely and drain any excess liquid before adding them to the saucepan. This prevents a watery filling.
- Serving Warm is Key: These tarts are best enjoyed warm, right out of the oven, when the filling is gooey and the shell is at its crispiest.
Endless Possibilities: Variations & Customizations
Part of the joy of baking is making a recipe your own. These mini tarts are a fantastic canvas for creativity!
- Alternate Fruit Fillings: If berries aren’t your only love, try other fruit combinations. My Mini Apple Cinnamon Tarts are another popular choice if apple pie is more your style. Peach, cherry, or even a tropical mango filling could be delightful.
- Spice It Up: A pinch of cinnamon, nutmeg, or even a tiny dash of cardamom can elevate the berry flavors beautifully. Add it with the granulated sugar to the berry mixture.
- Delicious Toppings: A small dollop of light whipped cream, a scoop of low-fat vanilla ice cream, or an extra dusting of powdered sugar can take these tarts to the next level. A sprinkle of toasted almond slivers also adds a nice crunch.
- Citrus Zest: A tiny bit of lemon or orange zest, or a quarter teaspoon of juice added to the berry filling, can brighten the flavors considerably.
- Dietary Adaptations: For a sugar-free option, use a granulated sugar substitute suitable for baking. To make them dairy-free, use a plant-based butter alternative.

Pin Recipe
Ingredients
- 24 wonton wrappers, usually found in the produce section
- 1 tablespoon powdered sugar
- 1 tablespoon light butter, I use Land O’Lakes
- 1 cup diced strawberries
- 1 cup raspberries
- 1 cup blueberries
- 3 tablespoons granulated sugar
- 1 tablespoon corn starch
- ¼ cup hot water
Instructions
-
Pre-heat the oven to 350. Lightly mist 24 cups in a mini-muffin tin with cooking spray and set aside.
-
On a cutting sheet, a sheet of parchment paper or a clean, dry surface, lay out the wonton wrappers. Lightly mist the wrappers with cooking spray and then sprinkle with half of the powdered sugar. Flip each wrapper over and mist these sides with cooking spray as well. Sprinkle the remaining powdered sugar over the top so that both sides are sugared. Push each wonton wrapper into a slot of the mini muffin tray to form a cup. Bake in the oven for 8 minutes until brown and crispy.
-
While the wonton cups are baking, bring the butter to medium heat in a medium saucepan until melted. Add the berries and stir to coat. Cook uncovered for about 5 minutes, stirring occasionally. In a small dish, combine the corn starch and hot water and stir together until well combined. Pour the sugar and the corn starch slurry over the berries and stir to combine. Place the cover on your saucepan and once the mixture is bubbling (shouldn’t take long), reduce the heat to low and simmer for 3-5 minutes until the mixture thickens.
-
Spoon the berry mixture evenly into the baked wonton cups and return them to the oven for another 3-5 minutes.
