The Perfect Antidote to Chilly Days and Busy Schedules

Recently, the weather here in Buffalo reminded us all of winter’s true might. You might have seen the news reports about the impressive snowfalls and the challenging conditions faced by many. While my particular area was fortunate enough to avoid the worst of it, experiencing only a picturesque dusting and later a manageable amount of snow, the sheer thought of those record-breaking drifts was enough to make anyone crave the ultimate comfort food. My heart certainly went out to those affected, and I was touched by the messages of concern from readers – thank you for your thoughtfulness.

The sentiment expressed by Buffalo’s mayor, describing the snowfall as “a tale of two cities,” perfectly captured the contrasting experiences across the region. While some areas grappled with unprecedented snow, others, like mine north of the city, enjoyed relatively clear skies and unhindered daily life. Nonetheless, watching the news and seeing friends’ incredible photos on social media instilled a universal desire for warmth and coziness. Even without being snowed in, the crisp temperatures and the general slowdown of the region made staying indoors with a warm blanket and a steaming plate of food incredibly appealing. It was in this spirit that the idea for this Chicken Parmesan Quinoa Bake truly blossomed.

I’ve always loved creating healthier versions of classic comfort foods, and after the success of my Buffalo Chicken Quinoa Bake, I knew a Chicken Parmesan rendition was next on the list. This recent cold snap provided the perfect excuse to bring this idea to life. The result is a casserole that is not only incredibly delicious and satisfying but also surprisingly light, making it an excellent choice for those looking for a healthier meal without sacrificing flavor.

The Wholesome Power of Quinoa

At the heart of this bake is quinoa, a supergrain celebrated for its nutritional benefits. Quinoa is a complete protein, meaning it contains all nine essential amino acids, making it an excellent plant-based protein source. It’s also rich in fiber, which aids digestion and helps you feel full longer, contributing to better weight management. Beyond protein and fiber, quinoa is packed with essential minerals like magnesium, potassium, iron, and zinc, as well as various B vitamins and antioxidants. Replacing traditional pasta or breading with quinoa in this dish not only boosts its nutritional profile but also adds a delightful, slightly nutty texture that complements the rich Italian flavors perfectly. It’s a smart way to enjoy your favorite comfort food with an extra dose of health.

Ingredients

  • 1 teaspoon olive oil
  • 1/3 cup chopped onions
  • 2 garlic cloves, minced
  • 15 oz can tomato sauce
  • 8 oz can tomato sauce
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon lemon juice
  • ½ teaspoon sugar
  • ¼ teaspoon crushed red pepper flakes
  • 2 oz 1/3 less fat cream cheese, cubed
  • 6 tablespoons grated Parmesan cheese, divided
  • 1 cup shredded 2% Mozzarella cheese
  • 3 cups cooked quinoa
  • 10 oz cooked, shredded chicken breast
  • 3 tablespoons seasoned bread crumbs

Instructions

  1. Pre-heat the oven to 350°F (175°C). Lightly mist a 2 QT baking dish (such as 7×11 or 9×9 inches) with cooking spray and set aside.
  2. In a large skillet or sauté pan with a cover, heat the olive oil over medium heat. Add the chopped onions and cook for about 4 minutes, stirring occasionally, until they become translucent. Add the minced garlic and stir. Continue to cook for another 30-60 seconds until the garlic is fragrant and just begins to turn golden. Be careful not to burn the garlic.
  3. Pour in both cans of tomato sauce, then reduce the heat to low-medium. Stir in the Italian seasoning, salt, lemon juice, sugar, and crushed red pepper flakes. Add the cubed 1/3 less fat cream cheese and stir continuously until it has completely dissolved into the sauce, creating a smooth and creamy consistency. Cover the pan and let it simmer for 5 minutes. Remove from heat and stir in 4 tablespoons (1/4 cup) of the Parmesan cheese and ½ cup of the shredded Mozzarella. Stir until both cheeses are melted and fully incorporated into the sauce.
  4. In a large mixing bowl, combine the cooked quinoa and shredded chicken. Pour the prepared tomato sauce over the chicken and quinoa mixture, then stir thoroughly until the chicken and quinoa are fully coated in the sauce. Transfer this mixture to your prepared baking dish, spreading it out evenly. Top the casserole with the remaining ½ cup shredded Mozzarella and 2 tablespoons of Parmesan cheese.
  5. In a dry skillet, place the seasoned bread crumbs over medium heat. Toast the bread crumbs for a few minutes, stirring frequently, until they turn golden brown and fragrant. This step adds a wonderful crunch and depth of flavor. Sprinkle the toasted bread crumbs evenly over the top of the casserole. Bake in the preheated oven for 35 minutes, or until the casserole is hot, bubbly, and the cheese is melted and lightly browned.

Tips for the Best Chicken Parmesan Quinoa Bake

  • Perfectly Cooked Quinoa: Ensure your quinoa is cooked to perfection – fluffy and light, not mushy. A ratio of 1 part quinoa to 2 parts liquid (water or vegetable broth) is standard. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until liquid is absorbed. Let it rest for 5 minutes off the heat before fluffing with a fork.
  • Shredded Chicken: Using pre-cooked shredded chicken is a huge time-saver. You can use rotisserie chicken, leftover chicken, or prepare a batch in your slow cooker specifically for this recipe.
  • Tomato Sauce Quality: The quality of your tomato sauce makes a difference. Opt for a good quality canned tomato sauce or your favorite homemade marinara for the best flavor.
  • Toasted Breadcrumbs: Don’t skip toasting the breadcrumbs! This step adds a crucial layer of texture and a golden, nutty flavor that elevates the whole dish. Keep an eye on them as they can burn quickly.
  • Cheese Blend: While the recipe calls for Parmesan and Mozzarella, feel free to experiment with a blend of Italian cheeses like provolone or fontina for added depth.

Serving Suggestions and Variations

This Chicken Parmesan Quinoa Bake is a complete meal on its own, but it pairs beautifully with a simple side salad dressed with a light vinaigrette to balance the richness. A side of steamed green beans or asparagus would also complement it wonderfully. For those who love a bit of extra indulgence, a slice of warm garlic bread is always a welcome addition.

Looking to customize? Here are a few ideas:

  • Add Veggies: Sauté some spinach, mushrooms, or bell peppers with the onions and garlic for an added boost of vegetables.
  • Spicier Kick: Increase the crushed red pepper flakes for more heat.
  • Herbs: Fresh basil or parsley stirred in at the end or sprinkled on top before serving will brighten the flavors.
  • Meatless Option: For a vegetarian version, omit the chicken and add cannellini beans or sautéed eggplant for a hearty texture.

Storage and Reheating

Leftovers of this Chicken Parmesan Quinoa Bake are just as delicious, if not more so, the next day! Store any remaining casserole in an airtight container in the refrigerator for up to 3-4 days. To reheat, you can portion it out and microwave it until hot, or cover the baking dish with foil and reheat in a 350°F (175°C) oven for about 20-25 minutes, or until warmed through. This casserole also freezes well. Simply cool completely, then wrap tightly and freeze for up to 2-3 months. Thaw in the refrigerator overnight before reheating.
