  • 5 oz shredded carrots
  • 24 oz of light alfredo sauce, (I used Classico; this typically equals one 15 oz jar plus an additional cup from a second jar)
  • 8 oz 1/3 less fat cream cheese, cubed
  • 1 cup 1% cottage cheese
  • 1 tablespoon minced fresh parsley
  • ½ cup grated parmesan cheese
  • 6 lasagna noodles, cooked al dente and drained
  • 1 cup shredded 2% Mozzarella cheese
  • 3 teaspoons oregano, divided

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the prepared spinach (ensure it’s very well drained), shredded zucchini, and shredded carrots. Cook for 5-7 minutes, stirring occasionally, until the vegetables have softened.
