Ingredients

  • 2 teaspoons chili oil, found near the Asian ingredients (or substitute with a dash of cayenne pepper for heat)
  • 3/4 lb 95% lean ground beef
  • 4 teaspoons taco seasoning (ensure it’s low-sodium if preferred)
  • 1 cup canned black beans, drained and thoroughly rinsed
  • 3/4 cup chunky salsa (mild or medium, depending on your heat preference)
  • 24 wonton wrappers, typically found in the refrigerated produce section
  • 8 tablespoons queso blanco dip or salsa con queso (ensure it’s creamy and melty)
  • 4 oz 50% reduced fat sharp cheddar cheese, freshly shredded for best melting

Instructions

  1. Pre-heat your oven to 375°F (190°C). Prepare a standard 12-cup muffin tin by lightly misting each cup with cooking spray. Set the tin aside.
  2. In a large sauté pan or skillet, heat the chili oil over medium-high heat. Add the lean ground beef and brown it thoroughly, breaking it into small crumbles with a spoon as it cooks. Once the meat is fully cooked through and no longer pink, drain any excess fat. Stir in the taco seasoning until the beef is well coated. Next, add the drained and rinsed black beans to the pan. Continue to cook for another 1-2 minutes, stirring occasionally, just until the beans are heated through. Remove the pan from the heat and stir in the chunky salsa until all ingredients are thoroughly combined.
  3. Carefully press one wonton wrapper into the bottom of each cup in your prepared muffin tin, forming a small cup or shell. Spoon approximately one teaspoon of queso dip into the bottom of each wonton cup, spreading it gently to coat. Next, spoon a generous portion of the seasoned beef and bean mixture into each cup, using about half of the total mixture evenly across all 12 cups. Sprinkle about half of the shredded cheddar cheese evenly over the top of the beef and bean mixture in each cup. Now, press a second wonton wrapper directly on top of the shredded cheese layer. Repeat the layering process with the remaining queso dip, meat/bean mixture, and shredded cheese, ensuring each cup is filled and topped.
  4. Place the muffin tin in the pre-heated oven and bake for 18-20 minutes, or until the wonton wrappers are golden brown and crispy, and the cheese is bubbly and melted. Once baked, remove the tin from the oven and let the Taco Wonton Cupcakes cool for about 5 minutes before carefully removing them from the muffin tin. This brief cooling period helps them firm up and makes them easier to handle.
