While I might not be the biggest fan of ranch dressing, the distinct herbaceous and savory notes of dry ranch seasoning are something I absolutely adore. It’s an interesting preference, but one that led to a double dose of ranch perfection in this recipe! To maximize that signature ranch kick, I’ve incorporated the seasoning in two key ways. First, it’s intimately blended with softened cream cheese, light mayonnaise, and shredded cheddar to create the rich, creamy filling nestled within each chicken breast. Second, it’s mixed into the panko coating, providing a flavorful, crispy crust. I found this balance to be just right, but if you’re like my husband and crave an even “ranchier” experience, don’t hesitate to add a little extra seasoning to either the filling or the coating mixture. This versatile recipe is also incredibly easy to adjust – whether you need to halve it for a cozy dinner for two or double it to feed a larger gathering or stock up on delicious leftovers.

Its rich flavors and satisfying texture mean it complements a wide array of side dishes. For a fresh and vibrant contrast, consider a light vegetable side. My Stovetop Green Beans with Almonds offer a delightful crunch and nutty flavor, while the comforting Zucchini Casserole provides a creamy, garden-fresh balance. Choose a side that balances the richness of the chicken, whether it’s through fresh greens, crisp vegetables, or a light grain.
Mastering Chicken Cutlets for Seamless Meal Prep
One of my favorite kitchen hacks for efficient cooking and meal prep is handling chicken breasts strategically. I often purchase larger, boneless, skinless chicken breasts in bulk from the grocery store. Not only is this more cost-effective, but it also gives me complete control over portion sizes. Using sharp kitchen shears, I meticulously trim these larger breasts down to approximately 5-6 ounce cutlets, which are ideal for recipes like this Cheesy Bacon Ranch Stuffed Chicken. For this particular dish, 6-ounce cutlets were just right, offering a perfect canvas for stuffing without being overly thick.
But what about the trimmed-off pieces? Nothing goes to waste in my kitchen! These smaller chicken chunks are perfect for creating delicious chicken bites. I cut them into even, bite-sized pieces to use in recipes such as my spicy Nashville Hot Chicken Bites, savory BBQ Rubbed Chicken Bites, zesty Lemon Pepper Chicken Bites, or robust Blackened Chicken Bites. This method allows me to get multiple meals out of one bulk purchase.
For ultimate convenience, I weigh out portions of these chicken chunks (typically 1 lb or 1.5 lb) and the 6 oz cutlets, then freeze them in quart-sized freezer bags. This ensures I always have pre-portioned chicken ready for any recipe, saving precious time on busy weeknights. Having both cutlets and bites on hand provides incredible flexibility. I find that kitchen shears are far superior to a knife for this task – they make trimming quicker, safer, and result in cleaner cuts. If you haven’t tried using them for chicken prep, I highly recommend investing in a good pair!
Stuffing the chicken breasts is surprisingly easy – just remember to sprinkle the bacon on top!

Pin Recipe
Ingredients
- 2 slices center cut bacon
- 2 oz 1/3 less fat cream cheese, softened
- 2 tablespoons light mayonnaise, I use Hellmanns light
- 2 oz shredded 2% milk sharp cheddar cheese
- 3 teaspoons dry ranch seasoning, divided (I use Hidden Valley Original Ranch seasoning and salad dressing mix)
- 4 (6 oz each) boneless skinless chicken breasts, 24 oz total (if you buy large breasts, trim them to 6 ounces each)
- 4 teaspoons all-purpose flour
- 1 large egg white, beaten
- ⅔ cup panko breadcrumbs
- 2 teaspoons canola oil
Instructions
-
Pre-heat your oven to 400 degrees Fahrenheit (200°C). Line a baking sheet with parchment paper, which will help with easy cleanup, and set it aside.
-
Cook the two slices of center-cut bacon until wonderfully crisp, following the instructions on your bacon package. Once cooked, transfer the bacon to a plate lined with paper towels to drain any excess fat. When cool enough to handle, chop or crumble the bacon into small pieces and reserve it for the filling.
-
In a small mixing bowl, combine the softened 1/3 less fat cream cheese, light mayonnaise (such as Hellmann’s Light for best results), shredded 2% milk sharp cheddar cheese, and one teaspoon of the dry ranch seasoning. Stir all these ingredients together thoroughly until they are well combined and form a smooth, creamy mixture.
-
Place the boneless, skinless chicken breasts on a clean cutting board. Using a sharp knife, carefully slice each breast horizontally from the thicker side, going almost all the way through to create a pocket, similar to a butterfly cut. Be careful not to cut completely through. Open each breast at the slit. Now, evenly distribute the prepared cream cheese mixture among the four breasts, spreading it across the surface of the bottom half of each breast. Next, sprinkle the crumbled bacon evenly over the cheese mixture on each chicken piece. Gently close the breasts, folding the top half back over the bacon and cheese filling, securing the delicious contents inside.
-
In a small, shallow dish, combine the all-purpose flour and the remaining two teaspoons of dry ranch seasoning; stir them together until well mixed. Place the stuffed chicken breasts into a large Ziploc bag, then add the ranch-flour mixture. Gently shake and flip the bag until each chicken breast is lightly and evenly coated with the flour mixture. Next, pour the beaten egg white into another shallow dish. In a third shallow dish, spread out the panko breadcrumbs. Remove each stuffed chicken breast from the flour bag, dip it first into the beaten egg white, turning to ensure it’s fully coated, then transfer it to the dish of panko crumbs, pressing gently to coat all sides evenly with the crispy breadcrumbs.
-
Heat two teaspoons of canola oil in a large skillet or sauté pan over medium-high heat. (*If your pan is not large enough to comfortably fit all four breasts without overcrowding, cook two breasts at a time, using one teaspoon of oil for each round). Carefully add the stuffed and coated chicken breasts to the hot pan. Sear for approximately 1 minute on each side, until the panko breadcrumbs turn a beautiful golden brown and become crispy. Once seared, transfer the breasts to the prepared baking sheet. Place the baking sheet with the chicken into your pre-heated oven and bake for 25-30 minutes, or until the chicken is fully cooked through and reaches an internal temperature of 165 degrees Fahrenheit (74°C). Serve immediately and enjoy!
