  • 4 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

 

  • Preheat your oven to 375 degrees Fahrenheit (190°C). Lightly mist a standard 12-count muffin tin with cooking spray, or line with paper liners, and set aside.
  • In a large mixing bowl, combine the egg, unsweetened applesauce, sugar, and vanilla extract. Stir these wet ingredients together thoroughly until they are well combined and smooth. Next, add the melted light butter to the mixture and stir again until fully incorporated. Gently fold in the fresh raspberries, being careful not to crush them, ensuring they are evenly distributed.
  • In a separate, medium-sized mixing bowl, whisk together the dry ingredients: all-purpose flour, unsweetened cocoa powder, baking soda, baking powder, and salt.
