  • 1 1-1 ½ lb Delicata squash, washed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • A sprinkling of cinnamon, to taste (optional)

Instructions

  1. Pre-heat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Slice the squash in half lengthwise to get two long halves. Use a spoon to scoop out the seeds and discard. Cut each squash half into ½” thick half-moon shaped slices.
  3. Place the squash slices into a bowl and drizzle with the oil. Stir until well coated. Transfer the squash slices to the prepared baking sheet, leaving space in between them. Sprinkle with salt, pepper, and cinnamon or desired seasonings. Bake for 10 minutes. Remove from the oven and flip each slice to the other side.
