Instructions

  1. To hard boil the eggs, place the raw eggs at the bottom of a large pot. Pour water in the pot until the water is 1-2 inches over the top of the eggs. Place the pot on the stovetop uncovered and turn the burner to high heat. Bring the water in the pot to a rolling boil. When the water comes to a boil, immediately cover the pot with a lid and turn off the heat to the burner. Leave the pot on the burner, covered, for exactly 12 minutes.
  2. While the eggs are cooking, place another large pot of water on a separate burner over high heat and bring it to a boil. Add the uncooked elbow macaroni to the boiling water and cook according to package instructions until al dente. Once the pasta is cooked, drain it thoroughly in a colander and then rinse the pasta under cold running water to cool it down completely. Set aside.
  3. After the eggs have sat in the covered pot for 12 minutes, prepare an ice bath. Fill a large mixing bowl about three-quarters of the way with ice water. Using a slotted spoon, carefully remove the hard-boiled eggs from the hot pot and transfer them directly into the ice water bath. Leave them in the ice water for several minutes until they are fully cold to the touch. This step is crucial for easy peeling and preventing the yolks from turning green.
  4. Once the eggs are cold, peel them under cold running water (this method often makes peeling much easier). Transfer the peeled eggs to a cutting board. Slice each egg in half lengthwise and carefully scoop out the vibrant yellow yolks into a large mixing bowl. Finely chop the egg whites and set them aside in a separate bowl.
