Savory Turkey Cranberry Quesadillas: The Ultimate Thanksgiving Leftover Reinvention

Thanksgiving. Just the word conjures images of overflowing tables, cherished family moments, and a feast so grand it’s anticipated all year long. For many, it’s a culinary highlight, a celebration featuring succulent roast turkey, savory stuffing, tangy cranberry sauce, and that golden, rich gravy – a true symphony of flavors that leaves us swooning. But after the last slice of pumpkin pie is devoured and the dishes are cleared, a familiar challenge emerges: what to do with all those delicious Thanksgiving leftovers?

For years, I’ve received countless requests for creative leftover recipes. The dilemma, however, always lay in providing accurate nutritional information. While families across the globe share similar Thanksgiving traditions, the preparation of beloved side dishes like stuffing or mashed potatoes can vary wildly, making precise calorie counts or Weight Watchers points nearly impossible to standardize. How can I offer a recipe where the core ingredients have such unpredictable nutritional profiles? This challenge often led me to shy away from creating specific leftover guides.

The Solution: Smart & Simple Leftovers

This year, a lightbulb moment occurred. I realized that while many Thanksgiving components differ, two ingredients often remain fairly consistent in their nutritional value: lean turkey breast meat and a good quality cranberry sauce. Aha! This opened up a world of possibilities. I decided to take a beloved post-Thanksgiving classic – the turkey, cranberry, and cream cheese sandwich – and give it a fun, modern twist: the Turkey Cranberry Quesadilla. By swapping out traditional bread for a lighter wrap, the vibrant flavors of the main ingredients truly get a chance to shine through, creating a delightful and less carb-heavy experience.

To elevate this quesadilla beyond the ordinary, I introduced a delicate drizzle of balsamic glaze. This simple addition imparts a wonderful tangy zip, beautifully complementing the richness of the turkey and the sweetness of the cranberry. A quick tip from my own kitchen mishaps: while it might look aesthetically pleasing for photos to drizzle the balsamic on the outside, I highly recommend drizzling it on the inside before folding. It makes for a much neater eating experience! I also originally planned to incorporate a layer of fresh baby spinach leaves for added nutrients and a pop of color, but they somehow missed making it into my shopping cart. I’ve listed them as an optional addition, and I truly believe they would enhance both the flavor and visual appeal of this fantastic leftover creation.

Why This Turkey Cranberry Quesadilla is a Must-Try

While my all-time favorite way to enjoy Thanksgiving leftovers will always be piling everything into a bowl and microwaving it for that ultimate comforting, steamy medley, this Turkey Cranberry Quesadilla has quickly climbed to the top of my list of go-to recipes. It’s not just a meal; it’s an experience. This recipe offers a playful and innovative approach to transforming holiday remnants into something fresh and exciting. Imagine enjoying this savory and sweet delight as a quick, satisfying lunch on Black Friday – a perfect energy boost amidst the shopping frenzy. Or, perhaps as a late-night snack once the post-Thanksgiving dinner food coma has begun to wear off, leaving you just hungry enough for something light yet flavorful.

The beauty of this quesadilla lies in its simplicity and speed. In just 10 minutes, you can create a meal that feels gourmet, yet uses ingredients you likely already have on hand. It’s a testament to how versatile Thanksgiving leftovers can be when approached with a little creativity. This dish is particularly appealing for those looking for a lighter option compared to heavy, traditional leftover sandwiches, allowing the star ingredients to truly shine without being overwhelmed by excessive bread.

A Flavor Profile That Delights

Let’s talk about the flavors. The tender, lean turkey breast provides a robust, savory foundation. This is beautifully contrasted by the bright, slightly tart sweetness of the cranberry sauce, which brings a festive tang to every bite. The cream cheese, softened and spread thinly, adds a subtle creaminess that binds the flavors together, while a hint of dried thyme introduces an earthy, aromatic note, reminiscent of classic holiday seasonings. And then, there’s the balsamic glaze. It’s not just a condiment; it’s a flavor enhancer. Its rich, sweet-tart profile cuts through the richness of the cream cheese and turkey, providing a sophisticated finish that elevates the entire dish.

The texture is equally satisfying: a crispy, golden-brown tortilla exterior yielding to a warm, melty, and flavorful interior. If you opt for the spinach, you’ll also enjoy a refreshing crunch and added vitamins, making this quesadilla a surprisingly well-rounded meal. This combination of textures and tastes ensures that each bite is an adventure, a delightful departure from the conventional way of eating leftovers.

Ingredients

  • 1 light original flatout, or other high fiber/low point wrap or tortilla
  • 1 oz 1/3 less fat cream cheese, softened
  • A pinch of dried thyme
  • 2 tablespoons whole berry cranberry sauce, homemade or canned
  • 2 oz cooked turkey breast
  • 1 teaspoon balsamic glaze, I used Wegmans brand, though other brands do sell it – you can also make your own, it’s really easy!
  • Optional, not pictured or included in nutrition information: fresh baby spinach leaves

Instructions

  • Lay your flatout or chosen wrap on a clean, flat surface. Evenly spread the softened cream cheese over one half of the wrap. Sprinkle a small pinch of dried thyme over the cream cheese, then gently spread the whole berry cranberry sauce over the top. Arrange the cooked turkey breast in a single layer over the cranberry sauce. If desired, add your optional fresh baby spinach leaves here. Drizzle the balsamic glaze over the turkey and other fillings (I recommend doing this on the inside for easier eating, even though I photographed mine on the outside for presentation). Finally, fold the bare half of the wrap over the prepared filling.
  • Mist a skillet with cooking spray and heat over medium flame. Carefully place the filled quesadilla onto the skillet. Lightly mist the top side of the quesadilla with cooking spray as well. Cook for approximately 2 minutes on each side, or until the exterior is golden brown and crispy, and the delicious contents are thoroughly heated through. Serve immediately and enjoy!
