  • 2 large eggs
  • salt and pepper, to taste
  • 1 cup fat free refried beans
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon cumin
  • 2 oz peeled and sliced avocado
  • 4-6 cherry tomatoes, sliced or chopped
  • 4 tablespoons salsa
  • 4 lime wedges
  • 2 teaspoons chopped cilantro

Instructions

 

  • Pre-heat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper and arrange the corn tortillas in a single layer. Lightly mist both sides of each tortilla with cooking spray. Place the baking sheet in the preheated oven for 5 minutes. After 5 minutes, flip each tortilla over and return them to the oven for another 5 minutes, or until they are firm, golden brown, and crispy.*Chef’s Note: While the tortillas are baking during the first 5 minutes, maximize your time by preparing your fresh toppings. Slice your avocado, chop your cherry tomatoes, and finely chop the cilantro. Once the tortillas are flipped for their second baking interval, you can then focus on cooking the eggs and warming the refried beans.
