As the vibrant hues of summer fade and the chill of autumn settles in, many home cooks find themselves longing for the fresh, sun-kissed flavors of seasonal produce. However, the changing seasons don’t have to mean sacrificing the deliciousness of fruits and vegetables in your meals. This challenge and opportunity are precisely what inspired the “Garden in your Pantry” campaign, a brilliant initiative that truly resonated with me. Collaborating with Del Monte on a holiday recipe post offered a fantastic chance to explore how pantry staples can transform everyday cooking into something extraordinary, especially during the colder months when fresh produce can be harder to find and significantly more expensive.
My journey into the world of “Garden in your Pantry” revealed Del Monte’s unwavering commitment to quality. They meticulously pick and package their fruits and vegetables at their peak ripeness, ensuring that these canned products retain a remarkable amount of nutrients, often comparable to their fresh counterparts. In fact, I was fascinated to learn that the peaches I used for this recipe actually boast more antioxidants and vitamins than some fresh peaches due to the specific canning process they undergo. This makes them an incredibly smart and convenient choice for your pantry, allowing you to enjoy nutritious and flavorful ingredients year-round, regardless of the season outside.

Embracing Seasonal Flavors with Pantry Staples
When brainstorming ideas for this campaign, peaches immediately came to mind. They are undeniably one of my absolute favorite “summer” fruits, bursting with a sweet, juicy flavor that epitomizes warm weather. The thought of enjoying them during the depths of winter, courtesy of my well-stocked pantry, was incredibly appealing. Initially, I considered a dessert, imagining a sweet, peach-infused treat. However, my culinary mind kept gravitating towards a more unexpected and equally delightful application: a savory peach sauce to accompany a festive main course. This idea sparked a creative fire, leading me directly to the concept of a succulent pork tenderloin.
Pork tenderloin is a remarkable cut of meat – lean, tender, and incredibly versatile. Its mild flavor serves as a perfect canvas for bold and fruity sauces, making it an ideal choice for a dish that aims to impress. The combination of sweet and savory elements often creates a culinary symphony that tantalizes the taste buds, and I knew a peach-based sauce would harmonize beautifully with the pork. Thus, the idea for this Roasted Pork Tenderloin with Ginger Peach Sauce was born – an effortless yet elegant choice for any holiday gathering or special occasion.
Crafting the Perfect Sweet and Savory Peach Sauce
Developing the sauce was an exciting process. My goal was to create a vibrant sauce that celebrated the natural sweetness of peaches while introducing sophisticated savory notes. The star ingredient, canned peaches, provided an excellent foundation. To elevate the flavor profile, I incorporated fresh ginger, a spice that beautifully complements peaches with its warm, zesty, and slightly peppery undertones. This pairing is a classic for a reason, adding a depth that transforms the sauce from merely sweet to wonderfully complex.
To further enhance the savory dimension, I added a touch of less sodium soy sauce. This might seem unconventional for a fruit sauce, but soy sauce brings a crucial umami element, perfectly balancing the sweetness of the peaches and the sharpness of the ginger. A hint of minced garlic added another layer of aromatic complexity. For those who appreciate a bit of heat, a dash of Sriracha provided a pleasant “zip.” If you prefer a spicier kick, feel free to increase the amount to your liking. A significant advantage of using Del Monte’s pre-sweetened peaches is that there’s absolutely no need to add extra sugar to the sauce, making this a healthier and simpler option for busy cooks. The Art of Roasting: From Searing to Succulence
Achieving a perfectly cooked pork tenderloin involves a crucial initial step: searing. While often seen as a step primarily for presentation, searing the pork in a hot skillet before transferring it to the oven plays a vital role in locking in an abundance of flavor and juices. This high-heat exposure creates a beautiful golden-brown crust, known as the Maillard reaction, which develops complex, savory flavors that penetrate the meat. It also helps to create a protective barrier, preventing the tenderloin from drying out during the roasting process.
The result of this careful preparation is nothing short of culinary perfection: soft, succulent, and incredibly juicy pork, elegantly coated in a sweet, savory, and subtly spicy ginger peach sauce. This dish tastes truly decadent, yet it remains surprisingly light, boasting less than 200 calories per serving. It’s a testament to how simple ingredients, thoughtfully prepared, can create a gourmet experience without the guilt. Imagine the delight of your holiday guests as they savor each bite of this impressive meal! For an extra festive touch, consider garnishing the finished dish with some plumped dried cranberries. To plump them, simply soak the dried cranberries in a bowl of hot water for about 10 minutes, then drain. The softened, ruby-red berries add a wonderful textural contrast and a burst of tart flavor that beautifully complements the rich sauce.

Pin Recipe
Ingredients
- 1 (14.5 oz) can Del Monte No Sugar Added Sliced Peaches, drained
- 2 teaspoons grated fresh ginger
- 1 tablespoon less sodium soy sauce
- 1 garlic clove, minced
- ½ teaspoon Sriracha
- 1 lb pork tenderloin, trimmed
- Salt & pepper, to taste
- 2 teaspoons Canola oil
- ¼ cup white wine
Instructions
-
Pre-heat the oven to 425°F (220°C). Line a baking sheet with aluminum foil and set aside. This ensures easy cleanup later.
-
In a blender or food processor, combine the drained peaches, grated fresh ginger, less sodium soy sauce, minced garlic, and Sriracha. Process until the mixture is smooth and well combined. This will form the base of your flavorful peach sauce. Set aside about two tablespoons of this sauce for basting the pork.
-
Season the trimmed pork tenderloin lightly with salt and freshly ground black pepper on all sides. Heat canola oil in a large oven-safe skillet over medium-high heat until shimmering. Carefully add the seasoned pork tenderloin to the hot skillet and sear it on each side until a beautiful golden-brown crust forms, approximately 4-5 minutes per side. This crucial step locks in flavor and juices. Once seared, transfer the tenderloin to the prepared baking sheet. Using a pastry brush, generously brush about two tablespoons of the reserved peach sauce over the surface of the pork. Place the baking sheet with the tenderloin into the pre-heated oven and roast for 18-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and is juicy with a slightly pale pink center. Remember, pork tenderloin cooks quickly, so avoid overcooking to maintain its tenderness.
-
While the pork is roasting, prepare the remaining sauce. Pour the remainder of the peach sauce from step 2 into a small saucepan. Add the white wine and bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and allow the sauce to gently cook for about 10 minutes, stirring occasionally, until it thickens slightly and the flavors meld together beautifully. Once the pork tenderloin is cooked, slice it into medallions and serve immediately, generously ladling the warm ginger peach sauce over each serving. Enjoy this impressive yet simple meal!
