Crispy Cheddar Chicken with Creamy Sauce: A Family Favorite Comfort Dish
There’s something incredibly satisfying about a meal that brings warmth and joy to the dinner table. For me, that’s often found in classic comfort food recipes. I’ve encountered numerous variations of Crispy Cheddar Chicken with Creamy Sauce across the internet, each promising a delightful experience. After much anticipation, I’m thrilled to share my own perfected version of this timeless dish. It’s remarkably simple to prepare, yields a generous amount, and undeniably delivers that hearty, comforting feeling we all crave. This recipe takes a beloved concept and refines it, offering a lighter yet equally flavorful alternative that I believe will become a staple in your home.
My unique twist incorporates cornflake crumbs instead of traditional Ritz crackers for the crispy coating, alongside a few other strategic modifications designed to lighten the dish without sacrificing taste or texture. The results have been consistently pleasing, producing a chicken that’s incredibly tender on the inside with an irresistibly crunchy, cheesy exterior. The secret to that fantastic crisp lies partly in the shredded cheddar cheese blended directly into the coating, which not only imparts a savory depth but also helps the crumbs adhere beautifully to the chicken during baking.
Complementing this delectable chicken is a rich, creamy sauce, primarily crafted from cream of chicken condensed soup. While I personally find the cream of chicken soup provides a fantastic flavor harmony, I understand that preferences vary. For those who prefer, cream of mushroom soup makes an excellent substitute, offering a different but equally delicious earthy note. If condensed soups aren’t your preference, don’t despair! The sauce can be easily omitted for a simpler meal, or you can opt to create a homemade cheese sauce or a béchamel from scratch. However, for a quick and satisfying meal, the condensed soup option is a winner, delivering consistent creaminess and flavor that pairs wonderfully with the crispy cheddar chicken.

Mastering the Crispy Coating and Creamy Sauce
The success of this Crispy Cheddar Chicken truly lies in its two main components: the incredibly flavorful crispy coating and the velvety, rich cream sauce. Let’s dive into what makes them so special.
The Perfect Crispy Coating
Unlike many traditional recipes that call for Ritz crackers, I’ve opted for cornflake crumbs, which provide a lighter, yet equally satisfying crunch. Cornflakes, when crushed into fine crumbs, create a delicate, uniform coating that becomes beautifully golden and crisp in the oven. The magic, however, happens when you integrate shredded cheddar cheese directly into these crumbs. As the chicken bakes, the cheddar cheese melts slightly, fusing with the cornflake crumbs to form a robust, flavorful crust that adheres perfectly to the chicken. This ensures every piece is enveloped in a delicious, cheesy crunch. This simple substitution not only enhances the texture but also adds a fantastic savory depth that complements the chicken exquisitely.
Crafting the Velvety Creamy Sauce
The creamy sauce acts as the perfect counterpoint to the crispy chicken. My go-to base for this sauce is a can of Campbell’s Healthy Request Cream of Chicken condensed soup. This choice simplifies the process immensely, delivering consistent flavor and a wonderfully smooth texture with minimal effort. The addition of fat-free sour cream introduces a slight tang and enhances the richness without adding excessive fat, while a touch of light butter ensures a luxurious mouthfeel. The result is a savory, warming sauce that coats each piece of chicken beautifully.
For those who prefer alternatives, cream of mushroom condensed soup is an excellent substitute, offering a deeper, earthier flavor profile. If you’re inclined to make a sauce from scratch, a simple béchamel (white sauce) with added cheese or herbs could be a delightful homemade option. However, for sheer convenience and a taste that consistently receives rave reviews, the cream of chicken soup base is hard to beat.

Ingredients
- 2 lbs boneless skinless chicken breasts, cut into 12 equal pieces (for me this was 4 large breasts; I cut each into 3 pieces)
- 2 tablespoons flour
- 2 egg whites
- 2 tablespoons skim milk
- 1 cup cornflake crumbs
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon onion powder
- 1 teaspoon dried parsley flakes
- 3 oz shredded 50% sharp cheddar cheese
- 10.5 oz can Campbell’s Healthy Request Cream of Chicken condensed soup
- 2 tablespoons fat free sour cream
- 2 tablespoons light butter (I used Land O’Lakes)
Instructions
- Pre-heat your oven to 400 degrees Fahrenheit (200°C). Lightly mist a 9×13 inch baking dish with cooking spray and set it aside.
- Place the chicken pieces into a gallon-sized zip-top bag along with the flour. Seal the bag and shake or massage its contents until all the chicken pieces are evenly coated with flour.
- In a shallow dish, combine the egg whites and skim milk. Whisk them together lightly with a fork until just combined. In a separate shallow dish, combine the cornflake crumbs, salt, black pepper, onion powder, dried parsley flakes, and shredded cheddar cheese. Stir these dry ingredients together thoroughly until well combined.
- Take one chicken piece from the flour-coated bag. Dip it into the egg white mixture, ensuring all sides are coated. Then, transfer it to the crumbly cheese mixture and press gently to coat all sides evenly with the crumbs and cheese. Place the coated chicken in the prepared baking dish. Repeat this coating process with all remaining pieces of chicken. If any of the crumb/cheese mixture is left over, sprinkle it evenly over the top of the chicken in the dish.
- Lightly mist the tops of the chicken breasts with cooking spray. Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 35 minutes. After 35 minutes, remove the aluminum foil and continue to bake for an additional 10-12 minutes uncovered, or until the chicken coating is deliciously crispy and golden brown, and the internal temperature of the chicken reaches 165°F (74°C).
- While the chicken finishes baking, prepare the creamy sauce. In a small saucepan, combine the cream of chicken soup, fat-free sour cream, and light butter. Place the saucepan over medium heat. Cook, stirring occasionally, until the sauce is heated through and smooth. Do not boil. Once the chicken is done, serve the warm sauce generously over each piece of crispy cheddar chicken. One serving is typically two pieces of chicken and about 3 tablespoons of sauce.

Tips for Success with Your Crispy Cheddar Chicken
Achieving the perfect Crispy Cheddar Chicken with Creamy Sauce is simple with these expert tips:
- Even Chicken Thickness: For uniform cooking, ensure your chicken pieces are of similar thickness. If breasts are very thick, you can gently pound them to an even half-inch thickness before cutting.
- Double Dredging for Extra Crisp: Don’t rush the coating process. Ensure each piece of chicken is fully coated in flour, then dipped thoroughly in the egg mixture, and finally generously pressed into the cornflake crumb mixture. This creates a robust crust.
- Don’t Skimp on the Mist: Lightly misting the coated chicken with cooking spray before baking is crucial. This helps the crumbs get extra golden and crispy in the oven.
- Monitor Oven Temperature: Ovens can vary. Keep an eye on your chicken during the last 10-12 minutes of uncovered baking to ensure it browns perfectly without burning.
- Sauce Consistency: If your sauce seems too thick, you can thin it with a tablespoon or two of skim milk or chicken broth until it reaches your desired consistency. If you prefer a thicker sauce, cook it a bit longer on medium-low heat, stirring constantly.
- Serve Immediately: For the best texture, serve the crispy chicken as soon as it comes out of the oven and is coated with the warm sauce.
Delicious Variations and Serving Suggestions
This Crispy Cheddar Chicken recipe is wonderfully versatile, allowing for many delicious adaptations:
Variations:
- Spicy Kick: Add a pinch of cayenne pepper or red pepper flakes to the cornflake crumb mixture for a subtle heat.
- Herb Garden: Experiment with different dried herbs in the coating, such as Italian seasoning, thyme, or rosemary, for varied aromatic profiles.
- Cheese Please: While cheddar is classic, try swapping it for a blend of Colby Jack, Monterey Jack, or even a touch of Parmesan in the coating for a different cheesy flavor.
- Mushroom Lover’s Sauce: As mentioned, substituting cream of mushroom soup for cream of chicken soup in the sauce works wonderfully. You can also sauté fresh mushrooms and stir them into the sauce for added texture and flavor.
- Veggie Boost: Stir in a handful of finely chopped cooked vegetables like peas, carrots, or broccoli florets into the sauce for an extra nutritional punch.
Serving Suggestions:
The beauty of this Crispy Cheddar Chicken lies in its ability to complement a wide array of side dishes. Here are some fantastic pairings:
- Classic Comfort: Serve alongside creamy mashed potatoes or fluffy white rice to soak up every drop of that delicious sauce.
- Green Goodness: A simple steamed vegetable like green beans, asparagus, or broccoli provides a fresh, healthy contrast. A crisp side salad with a light vinaigrette is also an excellent choice.
- Hearty Sides: Roasted root vegetables, such as carrots and parsnips, or a baked sweet potato, would make for a more substantial and nutritious meal.
- Pasta Perfection: A light pasta side, such as buttered egg noodles or a simple spaghetti with a hint of garlic, can also complement the dish beautifully.
Storing and Reheating Leftovers
Leftovers of Crispy Cheddar Chicken with Creamy Sauce are just as delightful, though the coating may soften slightly. Store any remaining chicken and sauce separately in airtight containers in the refrigerator for up to 3-4 days. To reheat, warm the chicken in an oven or air fryer at 350°F (175°C) for 10-15 minutes to help restore some crispiness. Gently warm the sauce on the stovetop over low heat, stirring occasionally, or in the microwave. Combine just before serving for the best experience.
