  • 2 cups broccoli florets (fresh or frozen, thawed)
  • ¼ cup sliced carrots (adds sweetness and color)
  • ¼ of a small onion (for aromatic flavor)
  • ½ cup chopped zucchini (adds moisture and nutrients)
  • 2 large eggs (essential binder)
  • ¾ cup panko breadcrumbs (for a crispier texture)
  • ½ teaspoon salt (to enhance flavors)
  • 1/3 cup Sabra hummus, I highly recommend their Roasted Garlic or Roasted Red Pepper flavors for a robust taste, but feel free to use your absolute favorite variety!

Instructions

 

  • Begin by preparing your vegetables. Place the broccoli florets and sliced carrots into a microwave-safe bowl. Cover the bowl with a damp paper towel and microwave on high for 2 minutes to slightly soften them. This step ensures the vegetables are tender enough to process easily and contributes to a better tot texture. Carefully transfer the softened broccoli and carrots to the bowl of your food processor. Add the quartered onion and chopped zucchini to the food processor. Cover the processor and pulse several times until all the vegetables are finely minced. Be careful not to over-process them into a paste; you want a finely chopped, uniform mixture. Transfer these minced veggies back into a large mixing bowl. Add the two large eggs, ¾ cup of panko breadcrumbs, ½ teaspoon of salt, and 1/3 cup of your chosen Sabra hummus (Roasted Garlic or Roasted Red Pepper are excellent choices for depth of flavor). Stir all the ingredients together thoroughly until they are well combined and form a cohesive mixture.
  • Pre-heat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with either aluminum foil or parchment paper to prevent sticking, and then mist it generously with cooking spray. This crucial step helps achieve that desirable crispy exterior. Take a rounded tablespoon of the prepared veggie mixture for each tot. Using your hands, gently form each portion into a classic tot shape, about 1-1.5 inches long. Place each tot onto the prepared baking sheet, ensuring there’s a little space between them for even cooking. Repeat this process with the remaining veggie mixture until you have approximately 25 uniformly sized tots. Once all the tots are arranged, mist the tops of them lightly with cooking spray one more time. This extra misting aids in browning and crisping.
  • Bake the tots in your pre-heated oven for 10 minutes. After 10 minutes, carefully remove the baking sheet from the oven and use a spatula to flip each tot over. This ensures even cooking and browning on all sides. Return the baking sheet to the oven and continue to bake for an additional 10-12 minutes, or until the tots are golden brown and crispy. Keep an eye on them during the final few minutes to prevent over-browning. Once baked to perfection, remove them from the oven and serve warm. These Hummus Veggie Tots are best enjoyed fresh out of the oven, perhaps with an extra dollop of Sabra hummus for dipping!
