The combination of salty bacon, tender broccoli, and rich cheddar cheese baked into a fluffy egg custard is simply irresistible. This dish is not only ideal for a leisurely weekend brunch but also makes an excellent option for meal prepping throughout the week. The simple, clean flavors appeal to a wide range of palates, making it a guaranteed crowd-pleaser at family gatherings or potlucks. Plus, involving children in the cooking process, as I do with my toddler, adds an extra layer of joy and encourages healthy eating habits from a young age.

Mastering the Ingredients: Tips for the Best Bacon Broccoli Quiche
While the ingredient list is straightforward, a few thoughtful choices can elevate your quiche from good to exceptional:
- Bacon: We specify “center cut bacon” for a reason. This type of bacon typically has less fat than regular bacon, contributing to a lighter quiche without sacrificing that essential savory, smoky flavor. Cook it until crisp, then crumble or chop it into small pieces for even distribution throughout the quiche.
- Pie Crust: A frozen pie crust is your best friend for convenience. Opt for a regular 9-inch crust, not deep-dish, to ensure the filling proportions are just right and to prevent the crust from becoming soggy. If you’re feeling ambitious, a homemade pie crust can add an extra layer of artisanal charm, but the frozen option works beautifully and saves valuable time.
- Cheese: The recipe calls for 50% reduced-fat sharp cheddar cheese. This choice reduces the overall fat content while still delivering a robust, tangy cheese flavor. Shredding it yourself from a block will often provide better melt and flavor than pre-shredded varieties, which sometimes contain anti-caking agents. However, pre-shredded is perfectly fine for convenience. Feel free to experiment with other cheeses like Gruyère or Swiss for different flavor profiles.
- Broccoli: Fresh broccoli florets offer the best texture and vibrant green color. Lightly cooking them in the microwave before adding them to the quiche ensures they are tender-crisp, not mushy, after baking. If using frozen broccoli, thaw it completely and pat dry to remove excess moisture before microwaving.
- Eggs and Milk: Large eggs form the rich, custardy base of the quiche. Skim milk helps keep the calorie count low while still providing creaminess. For a richer quiche, you could substitute low-fat or even whole milk, adjusting the nutritional information accordingly. Whisking thoroughly ensures a uniform, smooth custard.
Step-by-Step Perfection: Achieving the Ideal Texture and Flavor
Follow these detailed steps to ensure your Bacon Broccoli Quiche turns out perfectly every time:
- Pre-heat and Prepare: Start by pre-heating your oven to 425 degrees Fahrenheit. Line a sturdy baking sheet with aluminum foil. This isn’t just for easy cleanup; placing the pie crust on a baking sheet provides stability and catches any potential spills.
- Crispy Bacon: Cook your center-cut bacon to your desired crispness. While the package directions are a good guide, typically, pan-frying or baking the bacon yields the best results. Once cooked, transfer the bacon to a plate lined with paper towels to drain excess fat, then chop or crumble it into small, uniform pieces.
- Protecting the Crust: Place the frozen pie crust directly on the prepared baking sheet. To prevent the delicate edges of the crust from browning too quickly, loosely cover them with strips of aluminum foil. This simple trick ensures an evenly baked, golden-brown crust without any burnt edges.
- Layering the Fillings: Evenly sprinkle the shredded cheddar cheese across the bottom of the pie crust. This creates a delicious cheesy base that prevents the crust from becoming soggy. Next, distribute the cooked bacon pieces over the cheese. For the broccoli, place the florets in a microwave-safe bowl, cover with a damp paper towel, and microwave on high for about 90 seconds. This par-cooking step ensures the broccoli is tender when the quiche is done. Let it cool slightly, then spread the broccoli florets over the bacon and cheese.
- The Custard Base: In a separate mixing bowl, combine the large eggs, skim milk, salt, and black pepper. Whisk these ingredients together until they are well beaten and fully incorporated. Aim for a smooth, uniform mixture – don’t overwhisk, as too much air can cause the quiche to puff up and then fall. Carefully pour this egg mixture over the layered ingredients in the pie crust.
- Baking to Perfection: Transfer the baking sheet with the quiche to the pre-heated oven and bake for 15 minutes at 425 degrees. This initial high heat helps set the crust and begin the baking process. After 15 minutes, carefully remove the quiche from the oven, reduce the oven temperature to 350 degrees, and remove the aluminum foil strips from the crust edges. Return the quiche to the oven and bake for an additional 25 minutes, or until a knife or toothpick inserted into the center comes out clean. The quiche should be beautifully golden and set.
- Cool and Serve: Allow the quiche to cool for a few minutes before slicing and serving. This resting period allows the custard to fully set, making for cleaner slices and a better overall texture. Cut into 8 equal slices and enjoy!
Endless Customization: Make This Quiche Your Own
One of the best aspects of quiche is its adaptability. While this bacon broccoli version is a classic, don’t hesitate to get creative with your fillings:
- Vegetable Swaps: Replace or combine broccoli with other quick-cooking vegetables like spinach (sautéed and squeezed dry), mushrooms (sautéed), bell peppers (finely diced), or even asparagus tips.
- Cheese Varieties: Experiment with different cheeses. Swiss, Gruyère, Monterey Jack, feta, or a blend of Italian cheeses can each bring a unique flavor dimension.
- Protein Alternatives: If bacon isn’t your preference, consider cooked ham, breakfast sausage, crumbled turkey bacon, or even smoked salmon. For a vegetarian option, simply omit the bacon and perhaps add more vegetables or a pinch of smoked paprika for depth.
- Herbs and Spices: A sprinkle of fresh herbs like chives, dill, or parsley can brighten the flavors. A dash of nutmeg in the egg custard is also a traditional and delightful addition.
Beyond Breakfast: Serving and Storage Tips
While this Bacon Broccoli Quiche is a breakfast and brunch superstar, its versatility extends beyond the morning. It makes a fantastic light lunch served with a simple green salad, or a casual weeknight dinner when paired with a side of roasted vegetables. For a complete meal, consider serving it with a colorful fruit salad, a side of crispy home fries, or a fresh garden salad with a light vinaigrette.
Leftovers are just as delightful! Store any remaining quiche slices in an airtight container in the refrigerator for up to 3-4 days. To reheat, you can gently warm individual slices in the microwave, or for a crispier crust, reheat in a pre-heated oven or toaster oven until warmed through. This quiche also freezes well; wrap individual slices tightly in plastic wrap and then foil for up to 1-2 months. Thaw overnight in the refrigerator before reheating.

- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions

- Sprinkle the shredded cheese across the bottom of the pie crust and top with the bacon pieces. Place the broccoli florets in a bowl and cover with a damp paper towel. Place the bowl in the microwave and cook on high for about 90 seconds. Allow to cool for a minute or two and then spread the broccoli florets on top of the other ingredients in the pie crust.

- Place the baking sheet with the quiche into the oven and bake for 15 minutes at 425 degrees F (220 C). Remove from the oven and reduce the heat to 350 degrees F (175 C).
