Essential Tips for Crafting the Perfect Greek Chicken Meatball Sandwich
To ensure your Greek Chicken Meatball Sandwiches turn out absolutely perfect every time, pay close attention to these key preparation notes. These insights will elevate your cooking experience and guarantee a burst of authentic Mediterranean flavor in every bite.
Mastering the Tzatziki: The Art of Cucumber Preparation
The secret to a luscious, non-watery tzatziki sauce lies in one crucial step: properly preparing your cucumber. For this recipe, it’s essential to use shredded cucumber that has been thoroughly squeezed to remove any excess liquid. Skipping this step can result in a runny tzatziki that thins out your delicious sandwich. The process is straightforward: use the largest hole side of your box grater to shred the cucumber, then wrap it in several layers of paper towels or a clean kitchen towel. Over a sink, firmly squeeze out as much moisture as possible. You’ll be surprised how much water comes out! This simple technique ensures your tzatziki remains thick, creamy, and wonderfully flavorful.
The Magic of Chill Time: Enhancing Tzatziki Flavor and Meatball Structure
Just like a fine wine, tzatziki benefits immensely from a period of chilling. Preparing your tzatziki first and allowing it to chill in the refrigerator for at least 30 minutes gives the flavors of Greek yogurt, cucumber, garlic, lemon, and dill ample time to meld together, deepening their intensity and creating a truly harmonious taste. This chill time is equally vital for the meatballs. After forming, refrigerating the meatballs for at least 30 minutes helps them firm up considerably. This prevents them from falling apart when transferred to the hot pan and ensures they maintain their shape beautifully during cooking. A smart strategy is to prepare the tzatziki, pop it in the fridge, then make and chill your meatballs simultaneously. This way, everything is ready for assembly at mealtime, making it an excellent option for morning prep or even the night before!
Choosing Your Protein: Ground Chicken and Alternatives
For these delectable meatballs, we highly recommend using 92% lean ground chicken breast. This lean cut ensures the meatballs are moist and flavorful without being overly greasy, perfectly complementing the fresh Greek flavors. If you find ground chicken challenging to locate at your local grocery store, don’t fret! Ground turkey makes an excellent substitute. Opt for lean ground turkey (around 93% lean) to maintain the healthy profile and delicious texture. Both options absorb the herbs and spices beautifully, resulting in tender, succulent meatballs.
Forming the Meatballs: A Sticky Situation Solved
Working with ground chicken can be a bit sticky, but a simple trick makes forming the meatballs a breeze. Before you start rolling, lightly mist your hands with cooking spray. This creates a non-stick barrier that prevents the meat mixture from adhering to your hands, allowing you to quickly and easily shape perfect, uniform meatballs. You might find it helpful to reapply the cooking spray once or twice halfway through the process, especially if you’re making a larger batch. This small step saves on mess and frustration, making the preparation enjoyable.
The Humble Pita: Your Canvas for Flavor
The choice of pita bread can significantly impact your sandwich experience. We love using Joseph’s Flax, Oat Bran and Whole Wheat Pita Bread for this recipe. These pitas are not only delicious and have a great texture, but they are also a convenient size and incredibly light at just 60 calories or 1 WW Point each. They can often be found at larger grocery chains like Wegmans and Walmart. If you opt for a different brand or type of pita, remember to check its nutritional information, as this may affect the estimated WW Points and overall calorie count of your sandwich. Lightly warming your pita before assembling can also make it more pliable and enjoyable to eat.
Beyond the Plate: Serving Suggestions & Variations
While these Greek Chicken Meatball Sandwiches are perfect as described, their versatility allows for numerous creative serving suggestions and variations to keep your meals exciting.
- Deconstructed Bowl: For a low-carb or gluten-free option, serve the meatballs and tzatziki over a bed of mixed greens or quinoa, eliminating the pita. Add extra fresh veggies like olives, cucumbers, and bell peppers.
- Mini Skewers: Serve the cooked meatballs on small skewers with cherry tomatoes and cucumber chunks, accompanied by a side of tzatziki for dipping – perfect for appetizers or parties.
- Rice Pilaf or Orzo: Pair the meatballs with a side of fluffy lemon-herb rice pilaf or a light orzo pasta salad for a more substantial meal.
- Extra Veggies: Boost your nutrient intake by adding thinly sliced red onion, bell peppers, or even a sprinkle of fresh parsley to your pita.
- Spice it Up: For those who enjoy a little heat, a pinch of red pepper flakes in the meatball mixture or a dash of hot sauce in the tzatziki can add an exciting kick.
- Cheese Please: While feta is king, a sprinkle of grated Parmesan or a thin slice of provolone could offer a different cheesy dimension (though this would alter the traditional Greek flavor and nutritional profile).
Meal Prep Made Easy
These Greek Chicken Meatball Sandwiches are fantastic for meal prepping! You can prepare the tzatziki sauce and cook the meatballs ahead of time.
- Tzatziki: Store the tzatziki in an airtight container in the refrigerator for up to 3-4 days. The flavors will only deepen!
- Meatballs: Once cooked, allow the meatballs to cool completely before storing them in an airtight container in the fridge for up to 3-4 days. They reheat beautifully in a microwave or a skillet over medium-low heat.
- Assembly: When ready to eat, simply warm your pita, add the prepared ingredients, and assemble your fresh sandwich. This makes for a quick and effortless lunch or dinner during busy weekdays.

Ingredients
For the Tzatziki:
- ⅓ cup grated and squeezed dry cucumber
- 5.3 oz container plain nonfat Greek yogurt
- 1 garlic clove, minced
- 1 tablespoon lemon juice
- ¾ teaspoon dried dill weed
For the Meatballs:
- 1 large egg
- ⅓ cup panko breadcrumbs
- 2 garlic cloves, minced
- 2 teaspoons minced/chopped dried onion
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ¼ teaspoon dried rosemary
- ½ cup chopped fresh spinach leaves
- 1 oz crumbled feta cheese
- 1 lb uncooked 92% lean ground chicken
- 1 tablespoon olive oil
For the Sandwiches:
- 4 pitas (I use Joseph’s Flax, Oat Bran and Whole Wheat Pita Bread)
- 4-8 lettuce leaves (such as romaine or green leaf)
- 4-8 slices plum tomato, cut in half
Instructions
- To Make the Tzatziki: In a small mixing bowl, combine the Greek yogurt, thoroughly squeezed grated cucumber, minced garlic clove, lemon juice, and dried dill. Stir until all ingredients are well mixed. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to properly meld together. (Remember, the meatballs also require chilling, so this is a great step to do concurrently.)
- To Make the Meatballs: In a separate mixing bowl, add the egg, panko breadcrumbs, minced garlic, dried onion, salt, black pepper, dried oregano, dried basil, and dried rosemary. Stir these ingredients together with a fork until they are thoroughly combined. Next, add the chopped fresh spinach, crumbled feta cheese, and the ground chicken. Gently mix the chicken into the other ingredients with a fork until just combined, being careful not to overmix.
- On a clean surface, divide the meat mixture into 16 evenly sized portions. Lightly mist your clean hands with cooking spray, then roll each portion into a small meatball. Place the formed meatballs in a single layer inside a sealed container and refrigerate for at least 30 minutes. This chilling step is crucial for them to firm up and hold their shape during cooking.
- Once the meatballs have chilled, drizzle the olive oil into a large sauté pan and place it over medium heat. When the oil is hot and shimmering, carefully add the meatballs to the pan in a single layer, ensuring there is a bit of space between each one. Cook for 8-10 minutes, flipping them every couple of minutes to brown all sides evenly. After browning, cover the pan with a lid and reduce the heat to low. Continue to cook covered for about 5 minutes, removing the lid once or twice to stir the meatballs and then covering them again, until they are thoroughly cooked through.
- To Assemble the Sandwiches: Take each pita bread and place 1-2 lettuce leaves in its center. Layer 1-2 slices of plum tomato over the lettuce. Top the tomatoes with approximately 3 tablespoons of the chilled tzatziki sauce, then add four cooked chicken meatballs to each sandwich. Serve immediately and enjoy your delicious Greek Chicken Meatball Sandwiches!
