Crafting Your Own Flavorful Turkey Sausage from Scratch
The star of this dish is undoubtedly the homemade turkey sausage. Forget pre-packaged, often high-sodium versions; our recipe guides you through transforming lean ground turkey into a succulent, well-spiced sausage with a simple yet powerful seasoning blend. The magic happens when a thoughtful mix of herbs and spices infuses into the lean meat, creating a flavor that rivals traditional pork sausage but with significantly fewer calories and less fat.
For optimal flavor, we recommend mixing the ground turkey with our custom sausage seasoning and allowing it to marinate in the refrigerator for a couple of hours. This crucial step gives the meat ample time to absorb all the aromatic spices, deepening the overall taste experience. However, if time is of the essence, don’t fret! Even without the extended chill time, your turkey sausage will still be incredibly delicious and bursting with flavor. The ease and versatility of making your own seasoned ground turkey mean you’ll want to incorporate this technique into many more of your dishes.

The Anatomy of a Perfect Stuffed Mushroom
Achieving the perfect stuffed mushroom involves more than just the filling. Let’s break down the key components and techniques:
Choosing Your Mushrooms
For stuffed mushrooms, larger, sturdy mushroom caps are ideal. White button mushrooms or cremini (baby bella) mushrooms work wonderfully. Look for mushrooms that are firm, unblemished, and roughly uniform in size for even cooking and presentation. Ensure you gently wipe them clean with a damp cloth rather than rinsing them, as mushrooms absorb water easily, which can make them soggy.
Preparing the Caps
Carefully remove the stems from the mushrooms. These stems aren’t wasted; they can be finely chopped and added to the turkey sausage mixture for extra texture and flavor, reducing food waste and boosting the earthy notes of the dish. A gentle brush of melted butter on the mushroom caps before stuffing helps them achieve a beautiful golden brown color and prevents them from drying out during baking.
The Creamy, Savory Filling
The heart of these stuffed mushrooms is the rich and flavorful filling. After preparing your homemade turkey sausage, it’s sautéed with finely chopped onions and minced garlic, creating an aromatic base. The addition of 1/3 less fat cream cheese and grated Parmesan cheese melts into the mixture, providing a luxurious creaminess and a tangy, salty depth that perfectly complements the spiced turkey. Seasoned bread crumbs are then folded in, acting as a binder and adding a delightful texture, while dried basil and parsley elevate the herbaceous notes.
Baking to Golden Perfection
Once stuffed, the mushrooms are baked until tender, and the filling is heated through and lightly golden on top. The oven’s heat coaxes out the natural moisture from the mushrooms, tenderizing them while the buttered caps caramelize slightly, adding another layer of flavor and appeal. The result is a bite-sized appetizer that is soft on the outside and wonderfully savory and creamy on the inside.

Pin Recipe
Ingredients
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon paprika
- 2/3 teaspoon garlic powder
- 1/3 teaspoon fennel seed
- ¼ teaspoon crushed red pepper flakes
- 1 lb uncooked 99% fat free ground turkey breast
- 2 teaspoons olive oil
- ¼ cup finely chopped onion
- 1 clove garlic, minced
- 8 oz 1/3 less fat cream cheese, softened
- ¼ cup grated parmesan cheese
- 1/3 cup seasoned bread crumbs
- 1 tablespoon dried basil
- 1 ½ teaspoons dried parsley
- 30 pieces about 1 ½ – 2 lbs fresh white mushrooms, stems removed
- 3 tablespoons light butter, melted (I used Land O’Lakes)
Instructions
-
In a small dish, stir together the salt, pepper, paprika, garlic powder, fennel seed and red pepper flakes to make a homemade sausage seasoning blend. Place the ground turkey in a mixing bowl and pour this flavorful seasoning mix over the top. Use a spoon or your clean hands to thoroughly mix the seasoning into the ground turkey, ensuring it’s evenly distributed. For maximum flavor absorption, if time allows, cover and refrigerate for a couple of hours before proceeding with the recipe.
-
Preheat your oven to 400 degrees Fahrenheit (200°C). Line a large baking sheet with aluminum foil for easy cleanup and lightly mist it with cooking spray. Set this prepared baking sheet aside.
-
Heat the olive oil in a large skillet over medium heat. Add the seasoned ground turkey, finely chopped onions, and minced garlic to the skillet. Cook, breaking the meat up into small, bite-sized pieces with a spoon, until the onions are softened and translucent, and the turkey is cooked through and no longer pink. Drain any excess fat if necessary. Stir in the softened 1/3 less fat cream cheese and grated Parmesan cheese. Continue cooking over medium heat, stirring constantly, until both cheeses are fully melted and well combined with the turkey mixture, creating a creamy filling. Finally, stir in the seasoned bread crumbs, dried basil, and dried parsley until just combined. Remove from heat.
-
Place the melted light butter in a small dish. Arrange the mushroom caps, stem side up, on the prepared baking sheet. Using a pastry brush, lightly brush the tops and sides of the mushroom caps with the melted butter. This helps them achieve a beautiful golden hue and adds flavor. Evenly spoon the turkey sausage mixture into each mushroom cap, mounding it slightly. Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the mushrooms are tender and the filling is heated through and lightly golden. Serve warm and enjoy!
