  • 12 slices center cut bacon, cooked until perfectly crisp and crumbled (reserving ¼ cup for topping)
  • 2 x (8 oz) blocks 1/3 less fat cream cheese, softened to room temperature
  • 2/3 cup fat free sour cream
  • 4 oz 50% reduced fat sharp cheddar cheese, shredded (about 1 cup) – Cabot is a great choice for flavor
  • 5 oz shredded 2% Mozzarella cheese (approx. 1 ¼ cups)
  • 1 tablespoon yellow mustard
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt & freshly ground black pepper to taste
  • 1 cup diced, seeded tomatoes (grape tomatoes work wonderfully and are easy to dice)
  • 1 ½ cups finely shredded iceberg lettuce

Instructions

 

  • Begin by preparing your bacon. Cook the center cut bacon according to your preferred method until it is perfectly crisp. A fantastic way to achieve consistent crispness is to bake your bacon in the oven on a baking sheet at 400°F (200°C) for approximately 15-18 minutes, or until golden brown and crispy (cooking time may vary depending on bacon thickness and oven). Once cooked, transfer the bacon to a plate lined with paper towels to drain excess fat. Once cooled slightly, crumble or dice the bacon into small pieces. Reserve about ¼ cup of the crumbled bacon for the final topping, setting the rest aside.
  • Preheat your oven to 350°F (175°C). Lightly mist a 2-quart baking dish with cooking spray to prevent sticking. In a large mixing bowl, combine the softened 1/3 less fat cream cheese, fat free sour cream, shredded 50% reduced fat sharp cheddar cheese, shredded 2% Mozzarella cheese, yellow mustard, Italian seasoning, garlic powder, and the main portion of your crumbled bacon (remembering to keep ¼ cup aside for topping). Season with salt and freshly ground black pepper to taste. Stir all ingredients together thoroughly until they are well combined and smooth.
