Ingredients

  • 1 cup skim milk
  • ½ cup fat free evaporated milk
  • 2 egg whites
  • 1 egg
  • 1 cup all-purpose flour
  • ¼ cup + 1/3 cup sugar, divided
  • ¼ cup unsweetened cocoa powder
  • ½ t salt
  • 4 ½ teaspoon cornstarch
  • 1 cup water
  • 3 ½ cups raspberries, fresh or frozen (though if you use frozen, make sure you fully thaw them before using)
  • 1 teaspoon powdered sugar
  • 16 tablespoons light canned whipped cream, I forgot to add this before taking pictures, but it’s delicious!

Instructions

 

  • In a medium bowl, mix the milk, evaporated milk, egg whites and egg and stir to combine. In a separate bowl. Mix the flour, a ¼ of the sugar, the cocoa powder and salt and stir to combine. Add the flour mixture to the milk mixture and whisk together until thoroughly combined. Cover bowl and refrigerate for an hour.
  • In a medium saucepan, combine the remaining 1/3 cup of sugar and the cornstarch and set aside. Combine the raspberries and water in a blender and process for 1-2 minutes until pureed. Strain the puree through a fine-mesh strainer into the saucepan in small batches to remove the seeds (see photo below) until all the sauce is in the pan and all the seeds are removed. Discard the seeds. Stir the puree into the cornstarch mixture until combined. Bring the sauce to a boil and then cook for 2 minutes, stirring continuously until thickened. Transfer to a bowl and then refrigerate until chilled.
  • When the crepe batter is chilled, mist an 8” nonstick skillet with cooking spray and bring it between medium-low and medium heat (the original recipe suggested medium, but I found medium-low to medium yields perfect results without burning). Stir the batter and scoop 3 tablespoons of batter into the center of the skillet. Lift the skillet and tilt it to coat the bottom of the pan with a thin, even layer of batter. Cook until the top looks set and lightly cooked, then carefully flip with a spatula. Cook for an additional 15 seconds on the other side and then remove the crepe to a wire rack or paper towel to cool. Repeat with the remaining batter to make 16 crepes.
  • When the crepes have cooled, remove the raspberry sauce from the refrigerator. Place two crepes on a plate and fill each one with a line of two tablespoons of sauce. Gently roll the crepes over the sauce and then top each one with an additional tablespoon of sauce for a burst of flavor. Each plate gets topped with 1/8 teaspoon of powdered sugar for a touch of elegance, and each crepe receives a generous tablespoon of whipped cream. Repeat with remaining crepes and serve immediately.
  • To store any leftovers, refrigerate the remaining raspberry sauce in an airtight container (like Tupperware) and stack cooled crepes with wax paper or parchment paper between each one, storing them in a Ziploc bag for freshness.
