Ingredients
- ½ lb uncooked 95% lean ground beef
- ½ lb uncooked 99% lean ground turkey breast
- 1 medium yellow onion, chopped
- 4 garlic cloves, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon dried basil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes
- 2 tablespoons tomato paste
- 4 cups low sodium beef broth
- 28 oz can crushed tomatoes
- 1 cup pasta sauce (I used Mid’s Traditional Meatless)
- 8 oz uncooked whole wheat lasagna noodles, broken into 1″ pieces
- ½ cup fat free half and half
- 1 cup fat free ricotta cheese
- Optional: a sprinkle of dried or fresh parsley to garnish
Instructions
- Place a 5 QT Dutch oven or large soup pot over medium-high heat. Combine the ground beef and ground turkey and add it to the pot. Cook the meat, stirring and breaking it up into small chunks with a cooking spoon or spatula. Once the meat has started to separate, add the chopped onion and stir. Continue to cook for a few more minutes until the meat is fully cooked and the onions are softened and translucent.
- Add the minced garlic, Italian seasoning, basil, salt, black pepper, and crushed red pepper flakes to the pot and stir to combine with the meat and onions. Cook for an additional minute, allowing the aromas to develop. Stir in the tomato paste and cook for another minute, stirring frequently until the paste has softened and is well incorporated.
- Pour in the beef broth, crushed tomatoes, and pasta sauce into the pot, stirring well to combine all ingredients. Add the broken lasagna noodles, ensuring they are submerged in the liquid. Bring the pot to a rolling boil, then reduce the heat to low and let it simmer gently. Cook for 15-18 minutes, or until the pasta is cooked al dente, or to your preferred tenderness. Stir occasionally to prevent noodles from sticking.
- Remove the pot from the heat. Stir in the fat-free half and half until it is thoroughly combined and the soup has a creamy, unified texture.
