Ingredients

  • 6 Flatout Foldit Artisan Flatbreads, I highly recommend the 5 Grain Flax flavor for its amazing texture and taste
  • 1 lb 95% lean ground beef, (For a lower SmartPoints option, substitute with 99% lean ground turkey breast; each cup will be 2 SP on WW Blue or Purple)
  • 1 oz packet of taco seasoning
  • ½ cup water
  • ¾ cup shredded lettuce
  • 6 grape tomatoes, chopped into small pieces
  • 8 tablespoons prepared guacamole, or freshly made avocado mash
  • Cilantro, freshly chopped, for garnish (optional)

Instructions

 

  • Preheat your oven to a consistent 350 degrees Fahrenheit (175°C). Prepare a standard-sized muffin tin by lightly misting each well with cooking spray to prevent sticking. Using a sharp knife or kitchen shears, carefully cut each Flatout Foldit down the center, creating two distinct round flatbread halves. Gently press each flatbread half into a well of the prepared muffin tin, molding it to form a cup shape. Bake these cups in the preheated oven for 12-15 minutes, or until they achieve a beautiful golden-brown color and become deliciously crispy. Keep an eye on them to prevent over-browning.
  • While your taco cups are baking to perfection, begin preparing the savory filling. Place the lean ground beef in a large skillet over medium-high heat. Cook the meat, stirring frequently and breaking it into small crumbles with a spoon or spatula, until it is thoroughly browned and completely cooked through. Once cooked, carefully drain any excess grease from the pan to keep the filling light and flavorful. Return the pan to the heat, then add the taco seasoning packet and ½ cup of water. Stir everything together until well combined.
