- 2 ½ cups reduced sodium fat free chicken broth, divided
- 2 oz dry herb-seasoned stuffing mix, I use and recommend the Pepperidge Farm kind that comes in a bag
- 1 ½ lbs 99% lean ground turkey
- 1 large egg
- 1 tablespoon skim milk
- 1 teaspoon dried minced/chopped onion, found by the other dried spices, different brands call it minced/chopped
- ½ teaspoon dried thyme
- ½ teaspoon salt
- 1/8 teaspoon black pepper
- 4 tablespoons light butter, I use Land O’Lakes light butter
- ¼ cup flour
- 1 teaspoon Better Than Bouillon Chicken Base, you can also use powdered bouillon or a bouillon cube, but I highly recommend BTB, it’s awesome
- ½ teaspoon Gravy Master seasoning & browning sauce or Kitchen Bouquet

Preheat the oven to 350 degrees Fahrenheit (175°C).

Bring ½ cup of the chicken broth to a boil in a small saucepan. Stir in the dry herb-seasoned stuffing mix, then immediately cover the saucepan. Remove it from the heat and let it sit, covered, for 5 minutes to allow the stuffing to absorb the liquid and soften. Once rested, fluff the stuffing gently with a fork.

In a large mixing bowl, combine the 99% lean ground turkey, large egg, skim milk, dried minced onion, dried thyme, salt, and black pepper. Mix thoroughly until all ingredients are well combined. Divide this ground turkey mixture into 8 equal portions. Flatten each portion into a thin, round patty. (Note: ground turkey can be quite sticky; this is normal. Do your best to form even patties). Take four of the patties and place a quarter of the prepared stuffing mixture into the center of each. Carefully top these stuffed patties with the remaining four plain turkey patties. Press the edges together firmly to create a sealed bundle, ensuring the stuffing is fully encased within the turkey.

Arrange the four turkey bundles in a 9×13-inch baking dish. Bake in the preheated oven for 35-40 minutes, or until the turkey is cooked through and reaches an internal temperature of 165 degrees Fahrenheit (74°C).

While the bundles are baking (start this step when there are about 15 minutes left on the bundles’ cooking time), prepare the gravy. In a medium saucepan, melt the light butter over medium heat. Gradually add the flour, a little at a time, whisking continuously into the melted butter until a smooth paste (roux) forms. Cook this roux for 2-3 minutes, stirring regularly, to remove the raw flour taste. Reduce the heat to low. Slowly pour in the remaining 2 cups of chicken broth, whisking constantly to incorporate it smoothly into the flour mixture, preventing any lumps. Stir in the Better Than Bouillon Chicken Base and the Gravy Master seasoning & browning sauce. Increase the heat back to medium and continue to stir regularly until the gravy comes to a gentle boil and thickens to your desired consistency. Remove from heat and let it sit for at least 5 minutes; the gravy will continue to thicken as it cools slightly.
