Crafting Your Perfect Breakfast Burrito: Simple & Customizable

Turkey Sausage Breakfast Burrito filling ready to be wrapped in a tortilla.

Beyond being incredibly tasty, filling, and straightforward to prepare, these Turkey Sausage Breakfast Burritos shine in their versatility. They are wonderfully customizable, allowing you to tailor them to your precise preferences and dietary needs. Whether you crave a fiery kick or prefer a milder breakfast experience, these burritos adapt effortlessly.

Spice It Up or Keep It Mild

For those who love a bit of heat, consider using a hot salsa or incorporating a dash of your favorite hot taco sauce or a few slices of fresh jalapeños. My husband always gravitates towards more heat, so sometimes a sprinkle of chili flakes directly into the filling, or a drizzle of sriracha after reheating, does the trick. If you prefer a milder burrito, simply stick to a mild salsa. I find a medium salsa offers the perfect balance, adding just enough zest without overwhelming the other flavors.

Add a Boost of Veggies

Want to sneak in some extra nutrients? These burritos are a fantastic vehicle for vegetables! Sautéed spinach, diced tomatoes, or a colorful blend of bell peppers and onions would all be excellent additions. You could even incorporate some finely chopped mushrooms or grated zucchini for added texture and nutrients without significantly altering the flavor. Simply cook these veggies down before adding them to your egg and sausage mixture to ensure they are tender and well-integrated.

Introduce Beans and Healthy Fats

For an extra boost of fiber and plant-based protein, consider adding a spoonful of refried or black beans to your burrito. They add a creamy texture and make the burrito even more substantial. And for a dose of healthy fats and an incredibly creamy finish, a few slices of fresh avocado or a dollop of guacamole would be a luxurious and delicious addition. You can add these fresh ingredients just before wrapping or serving to maintain their texture and vibrant flavor. Feel free to experiment with different types of cheese too – a sprinkle of pepper jack could add more spice, or Monterey Jack for extra meltiness. These burritos are perfect as written, but the possibilities for making them uniquely yours are endless!

Mastering Meal Prep: Refrigerate for Freshness or Freeze for Convenience

One of the greatest advantages of these Turkey Sausage Breakfast Burritos is how perfectly they lend themselves to meal preparation. Whether you’re looking to prep for a few days or stock your freezer for weeks, these burritos have you covered, saving you valuable time on busy mornings and ensuring you always have a healthy option readily available.

To Refrigerate and Enjoy Throughout the Week

If you plan to enjoy your burritos within a few days, preparing the filling in advance is an excellent strategy. I often make a larger batch of the turkey sausage and scrambled eggs, then store the mixture in an airtight container in the refrigerator. When you’re ready for breakfast, simply scoop about 2/3 cup of the filling, gently reheat it in the microwave until warm, and then spoon it into a fresh tortilla. For that perfect crispy exterior, wrap your burrito and then give it a quick sizzle on a non-stick skillet over medium heat for a minute or two on each side, just like the final step in the recipe. This method ensures maximum freshness and a wonderfully warm, slightly crispy burrito every time. Stored properly, the filling will remain delicious for up to 3-4 days.

To Freeze for Long-Term Convenience

For those who prefer to have a ready-to-go breakfast solution for weeks or even months, freezing these burritos is an absolute breeze. The key to successful freezing is ensuring the filling is completely cool—ideally at room temperature or even chilled in the refrigerator—before you begin assembling and wrapping. This prevents condensation from forming inside the tortilla, which can lead to soggy burritos upon thawing and reheating. You definitely do not want hot filling when wrapping burritos for the freezer!

Once the filling is cool, assemble your burritos by dividing the mixture evenly among the tortillas, folding in the edges, and rolling them up tightly. Skip the final step of heating the outsides in a skillet at this stage, as you’ll be doing that later. Instead, individually wrap each assembled burrito tightly in plastic wrap, and then for an extra layer of protection against freezer burn, wrap it again in aluminum foil. This double wrapping method helps maintain freshness and flavor. Transfer the plastic and foil-wrapped burritos into a large Ziplock freezer bag, removing as much air as possible, and freeze them for up to three months.

When you’re ready to enjoy a frozen burrito, you have a couple of options. You can transfer it from the freezer to the refrigerator the night before to thaw. Once thawed, remove the plastic and foil, and reheat it in the microwave for 1-2 minutes, then finish it on a hot skillet for a crispy exterior. Alternatively, you can reheat directly from frozen by removing all wrapping, microwaving for 2-3 minutes until heated through, then crisping it in a skillet. Enjoying a hot, homemade breakfast burrito straight from the freezer on a busy weekday morning truly feels like a culinary victory!

Ingredients

  • ½ lb (8 oz) uncooked 99% lean ground turkey breast
  • ½ teaspoon salt, divided
  • ¼ + ⅛ teaspoons black pepper, divided
  • teaspoon ground sage
  • teaspoon ground thyme
  • teaspoon dried marjoram
  • teaspoon crushed red pepper flakes
  • teaspoon paprika
  • 4 large eggs
  • 3 oz 50% reduced fat sharp cheddar cheese, divided (I used Cabot)
  • ¼ cup salsa, (I used medium heat, feel free to use hot if you want these spicy!)
  • 1 tablespoon chopped fresh cilantro, (If you don’t like cilantro you can omit or substitute green onion)
  • 4 low carb 8-inch tortillas, (I used Tumaro’s Low-In-Carb Multi-Grain Wraps)

Instructions

  1. Place the ground turkey in a mixing bowl and add ¼ teaspoon of the salt, ¼ teaspoon of the black pepper, the sage, the thyme, the marjoram, the crushed red pepper, and the paprika. Mash/stir together with a fork or your hands until well combined to create your homemade turkey sausage.
  2. Mist a large skillet with cooking spray and heat over medium. Cook the seasoned ground turkey, breaking it up into small chunks, until fully cooked through and no longer pink. Transfer the cooked turkey into a clean mixing bowl and wipe out the skillet with a paper towel.
  3. In a separate bowl, whisk together the eggs, remaining ¼ teaspoon of salt, 1/8 teaspoon of black pepper, and a splash of water (this helps create fluffier scrambled eggs). Mist the skillet again with cooking spray and heat over medium. Add the beaten eggs and cook, gently pushing them around with a spatula to scramble, for a few minutes until cooked through. Break the scrambled eggs into small chunks with the spatula. Transfer the eggs to the mixing bowl with the turkey sausage. Add the shredded cheddar, salsa, and cilantro, then stir everything together until well combined.
  4. Lay the tortillas on a clean, dry surface. Divide the turkey sausage and egg mixture evenly among them (approximately 2/3 cup of filling per tortilla). To wrap, fold in the two opposite edges of a tortilla, then roll it up tightly from the bottom to create a neat burrito. Repeat with the remaining tortillas.
  5. Mist a griddle pan or large skillet with cooking spray and heat to medium. Place the rolled burritos onto the hot skillet seam-side-down and cook for 2-3 minutes, or until the bottoms are golden brown and slightly crispy. Flip the burritos and cook for another 2 minutes until the other side is also golden. Serve immediately or prepare for meal prepping as desired.
