Achieving the perfect texture for your broccoli is key. After a few pulses in the food processor, it should look like this – finely chopped, not puréed!

Essential Ingredients for Perfect Flavor

Every great recipe starts with quality ingredients. Here’s a closer look at what you’ll need and some tips for success:

  • Broccoli: Fresh broccoli florets are highly recommended for the best texture and vibrant flavor. Approximately two medium-large heads of broccoli should yield the six cups of florets needed. The key here is to pulse the florets in your food processor. Don’t just turn it on and let it run, or you’ll end up with a watery, “riced” consistency. Pulsing allows you to control the chop, creating perfectly sized mini-pieces that cook evenly and blend seamlessly into the dish.
  • Bacon: To keep this dish light yet flavorful, I always opt for center-cut bacon. It’s a leaner cut of regular bacon that still crisps up beautifully and delivers all that smoky, savory goodness without excess fat. Oscar Mayer is a reliable brand, but any center-cut bacon will do. If you’re looking for an even lighter option, turkey bacon can be a suitable substitute, though it will alter the flavor profile slightly.
  • Cheese: A touch of sharp cheddar cheese adds a wonderful creamy, salty bite that ties all the flavors together. We use 2% milk shredded sharp cheddar for a lighter touch. Feel free to experiment with other cheeses if you have them on hand. Colby Jack or shredded Parmesan would also be excellent choices, offering different nuances to the dish.
  • Broth: Vegetable broth is my go-to for this recipe, adding moisture and depth of flavor without extra fat. Chicken broth works just as well if that’s what you have. I always keep Better Than Bouillon in my fridge; it’s a fantastic way to quickly make broth by stirring a spoonful into hot water whenever needed, saving space and ensuring you’re never without!
  • Parsley: Fresh parsley is a non-negotiable for me in this recipe! Its bright, herbaceous notes provide a wonderful contrast to the richness of the bacon and cheese. Fresh truly makes a difference compared to dried. If fresh isn’t available, Gourmet Garden Lightly Dried Herbs are a great pantry staple – they’re already chopped and retain more fresh flavor than fully dried alternatives.
  • Other Essentials: Don’t forget the olive oil and light butter for sautéing, a medium onion for sweetness and aromatic depth, minced garlic for its irresistible fragrance, and a simple seasoning of dried thyme, salt, and black pepper to enhance all the ingredients.

Step-by-Step Cooking Instructions

Follow these easy steps to create your perfect Bacon Broccoli Side Skillet:

  1. Prepare the Bacon: Begin by cooking the center-cut bacon until it reaches your desired crispiness. Follow the package instructions for best results. Once cooked, transfer the crispy bacon to a plate lined with paper towels to drain any excess fat. Once cooled slightly, chop it into small, bite-sized pieces and set aside.
  2. Chop the Broccoli: While your bacon is cooking, prepare the broccoli. Place the fresh broccoli florets into your food processor. Use the pulse function repeatedly until the broccoli is finely chopped into very small, uniform pieces. Be careful not to over-process; you want small pieces, not a purée.
  3. Sauté the Aromatics: In a large sauté pan or a walled skillet, heat the olive oil and light butter over medium-high heat. Add the chopped onion and stir to coat. Cook for about 3 minutes, stirring occasionally, until the onion softens and becomes translucent.
  4. Add the Broccoli: Stir the finely chopped broccoli into the pan with the softened onions. Continue to cook for another 2-3 minutes, stirring occasionally, allowing the broccoli to begin to soften and take on some color.
  5. Incorporate Bacon & Cheese: Add the shredded sharp cheddar cheese and the chopped cooked bacon to the broccoli mixture. Stir everything together until well combined. Cook for approximately 6-8 minutes, stirring every couple of minutes. The goal is to let the bottom brown slightly before each stir, building layers of flavor and texture.
  6. Deglaze with Broth: Pour the vegetable broth into the skillet. Stir it into the broccoli mixture. The broth should be absorbed fairly quickly, helping to tenderize the broccoli and add moisture.
  7. Finish with Herbs & Spices: Add the minced garlic and one tablespoon of the fresh chopped parsley to the pan. Stir everything together and cook for another 30-60 seconds, or until the garlic becomes fragrant. Finally, sprinkle in the ¼ teaspoon each of dried thyme, salt, and black pepper, and stir to distribute evenly.
  8. Serve: Garnish the finished Bacon Broccoli Side Skillet with the remaining tablespoon of fresh chopped parsley and serve immediately. Enjoy this incredibly flavorful and satisfying side dish!

Pro Tips for a Flawless Side Dish

  • Crispy Bacon Perfection: For extra crispy bacon, start it in a cold skillet and cook over medium-low heat. This allows the fat to render slowly, resulting in perfectly crisp strips.
  • Don’t Overprocess Broccoli: The “pulse” function on your food processor is crucial. If you don’t have a food processor, you can finely mince the broccoli by hand, but it will take longer. Aim for pieces similar in size to rice grains, not a paste.
  • Choose the Right Pan: A large sauté pan or a walled skillet is ideal. The wider surface area allows the vegetables to spread out and brown rather than steam, enhancing their flavor and texture.
  • Layering Flavors: Adding the garlic and fresh parsley towards the end ensures their delicate flavors don’t burn off during longer cooking times, maximizing their aromatic impact.
  • Adjust Seasoning to Taste: Always taste and adjust salt and pepper before serving. Bacon can be quite salty, so start with the recommended amount and add more if needed.

Delicious Variations & Customizations

This Bacon Broccoli Side Skillet is wonderfully adaptable. Here are some ideas to make it your own:

  • Cheese Swaps: Beyond cheddar, consider Gruyère for a nutty flavor, smoked Gouda for extra depth, or a blend of Italian cheeses for a different profile.
  • Add More Veggies: Sauté finely diced bell peppers (red or yellow for sweetness) or mushrooms along with the onion for added color and nutrients. A handful of fresh spinach can be stirred in at the very end until just wilted.
  • Spice It Up: A pinch of red pepper flakes added with the thyme can give this dish a subtle kick. Smoked paprika would also be a great addition for more smoky flavor.
  • Herbal Enhancements: While parsley is excellent, a little fresh dill or chives could also complement the flavors beautifully.
  • Make it a Meal: Transform this side dish into a light main course by stirring in cooked, shredded chicken, grilled shrimp, or even some leftover baked salmon towards the end of cooking.

Perfect Pairings & Serving Suggestions

This versatile Bacon Broccoli Side Skillet is the perfect companion to a wide array of main dishes. Its rich flavor and satisfying texture make it a standout on any plate.

  • Seafood: Surprisingly delicious with baked cod, pan-seared salmon, or grilled shrimp. The bacon and broccoli provide a hearty counterpoint to lighter seafood options.
  • Egg Dishes: For a hearty breakfast or brunch, serve it alongside scrambled eggs, an omelet, or even as a filling for breakfast burritos.
  • As a Light Main: With the added bacon and cheese, this skillet is substantial enough to be enjoyed on its own as a light lunch or dinner, perhaps with a simple green salad.

This dish is best enjoyed fresh. However, you can prep some ingredients in advance: cook and chop the bacon, and finely chop the broccoli and onion. Store them separately in the refrigerator. When ready to cook, simply combine and follow the recipe steps.
How should I store leftovers?
Store any leftover Bacon Broccoli Side Skillet in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave until warmed through.

Ingredients

  • 4 slices center cut bacon
  • 6 cups uncooked broccoli florets
  • 1 tablespoon olive oil
  • 2 tablespoons light butter, (I use Land O’Lakes light butter with canola oil in the tub)
  • ½ a medium onion, chopped
  • 1 oz shredded 2% milk sharp cheddar cheese
  • 3 tablespoons vegetable broth
  • 4 garlic cloves, minced
  • 2 tablespoons chopped fresh parsley, divided
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Cook the bacon to crisp according to package instructions and then lay on paper towels to drain. Chop into small pieces and set aside.
  2. While the bacon is cooking, place the broccoli florets in your food processor and pulse (don’t just turn it on or your broccoli will be completely riced into itty bitty pieces) until the broccoli is finely chopped into very small pieces.
  3. Put the olive oil and butter into a large sauté pan or walled skillet and bring over med-high heat. Add the onion and stir to coat. Cook for about 3 minutes, stirring occasionally, until softened. Add the finely chopped broccoli and stir together. Cook for another 2-3 minutes, stirring occasionally.
  4. Add the shredded cheddar and the chopped cooked bacon and stir into the broccoli. Cook, stirring every couple minutes, for about 6-8 minutes, letting the bottom brown a bit before stirring each time. Pour in the broth and stir into the broccoli. This should get soaked up pretty quickly.
  5. Add the garlic and one tablespoon of the chopped parsley and stir together. Cook for another 30-60 seconds until the garlic is fragrant. Add the ¼ teaspoon each of thyme, salt, and pepper and stir. Sprinkle with the remaining tablespoon of chopped parsley and serve.
