The Secret to a Healthier, Flavorful BBQ Chicken Casserole
When it comes to crafting a lighter yet deeply flavorful casserole, a crucial element is your choice of barbecue sauce. It’s important to note that the nutrition facts for barbecue sauces can vary quite dramatically between brands. This significant difference can directly impact the calorie count and Weight Watchers points for this delicious recipe. For this particular Bubble Up BBQ Chicken and Beans Bake, I highly recommend using a lower-carb option like Stubbs Original. This fantastic sauce contains only 6 grams of carbs and 4 grams of sugar per 2 tablespoon serving, all while delivering an exceptional depth of flavor that truly elevates the dish.
If you’re aiming to keep the nutrition information consistent with my recipe, I strongly advise taking a moment to check the labels and look for a barbecue sauce that is similarly lower in carbs and sugar. This small step can make a very big difference in the overall health profile of your casserole without sacrificing any of the mouthwatering taste. A great barbecue sauce forms the backbone of this dish, infusing the chicken and beans with that signature smoky, sweet, and tangy goodness that makes this bake so irresistible.
Preparing Your Chicken for the Ultimate Bubble Up Bake
The beauty of this recipe lies in its flexibility, especially when it comes to preparing the chicken. You can effortlessly use leftover cooked chicken breast, which is a fantastic way to minimize food waste and speed up prep time. Store-bought rotisserie chicken breast is another excellent, time-saving option, providing tender, pre-cooked meat with minimal effort. Simply shred or chop it, and you’re good to go!
However, if you’re looking for my absolute favorite method to prepare shredded chicken for casseroles and other recipes, it’s this super simple slow cooker method. Cooking chicken breast in a slow cooker yields incredibly tender, juicy, and easy-to-shred chicken every single time. It’s a hands-off approach that guarantees perfectly cooked chicken, ready to absorb all the delicious barbecue flavors in this casserole. Whichever method you choose, ensure your chicken is cooked through and shredded or chopped into bite-sized pieces for optimal integration into the bake.

Ingredients
- 4 slices center cut bacon, for optimal crispiness and flavor
- 12 oz cooked shredded or chopped skinless chicken breast, such as leftover, rotisserie, or slow cooker chicken
- 15.5 oz can of navy beans or white beans, drained and thoroughly rinsed for best taste and texture
- 1 cup barbecue sauce, I use Stubbs Original for its rich flavor and lower carb content, highly recommended!
- 8 oz can tomato sauce, to create a rich, cohesive sauce base
- 1 (7.5 oz) can of refrigerated biscuit dough, biscuits cut into quarters , (I used Wegmans brand, but Pillsbury also makes them. If you can only find larger “Grands” style biscuits, weigh out 7.5 ounces and cut them into small, bite-sized pieces to ensure they cook evenly and ‘bubble up’ properly.)
- 4 oz 1 cup 50% reduced fat shredded Cheddar cheese, for a cheesy, golden topping
Instructions
-
To begin, pre-heat your oven to 350°F (175°C). While the oven is heating, lightly mist a 9×13 inch baking dish with cooking spray. This step helps prevent sticking and makes for easier cleanup. Set the prepared dish aside.
-
Next, cook the center-cut bacon. Follow the package directions for your preferred cooking method, whether it’s pan-frying until crispy or baking in the oven. Once cooked to a perfect crisp, transfer the bacon to a plate lined with paper towels to absorb any excess grease. After it has cooled slightly, chop the bacon into smaller, bite-sized pieces. These flavorful bits will be distributed throughout the casserole, adding a wonderful smoky crunch.
-
In your prepared 9×13 inch baking dish, combine the cooked shredded chicken, drained and rinsed navy or white beans, barbecue sauce, tomato sauce, and the chopped crispy bacon. Stir all these ingredients together thoroughly until they are well combined and the chicken and beans are evenly coated in the rich, savory sauce. Now, open your can of refrigerated biscuit dough and cut each biscuit into quarters. Gently add these biscuit pieces to the mixture in the baking dish and stir them in carefully to ensure they are also coated with the sauce. This step is key for the “bubble up” effect! Bake the casserole for 25 minutes. After 25 minutes, carefully remove the dish from the oven and evenly sprinkle the shredded 50% reduced-fat Cheddar cheese over the top of the casserole. Return it to the oven for an additional 15 minutes, or until the casserole is bubbling hot, the cheese is melted and golden, and the biscuits have puffed up beautifully and are cooked through. Once done, slice the casserole into 6 equal pieces and serve immediately for a truly comforting meal.

Ingredient Customization Tips: Feel free to experiment with different types of beans, such as cannellini beans or great northern beans, for subtle variations in texture and flavor. For an extra layer of taste, consider adding a pinch of smoked paprika or a dash of hot sauce to the mixture before baking, if you enjoy a little heat!
Make Ahead Option: You can prepare the chicken and bean mixture (excluding the biscuit pieces) up to a day in advance. Store it covered in the refrigerator. Before baking, let it come closer to room temperature, then stir in the biscuit pieces and proceed with baking as directed. This makes weeknight dinners even faster!
Serving Suggestions: This casserole is a hearty meal on its own, but it pairs wonderfully with a fresh green salad or a side of steamed corn on the cob for a complete and balanced dinner.
