  • 1 tablespoon olive oil
  • 6 oz (2 links) fully cooked Chorizo chicken sausage, sliced on a bias (the kind that comes pre-cooked, such as al fresco)
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 8 oz uncooked whole grain wild rice blend, I used Wegmans Whole Grain 5 Rice Blend
  • 1 ¼ cups water
  • 16 oz roasted tomato salsa, or your favorite type (Wegmans, Frontera, Wholly Salsa, etc all have Roasted Tomato salsas)
  • 12 oz cooked chicken breast, chopped or shredded (I used grilled, but any kind would work)
  • 1/3 cup chopped green olives with pimientos, I also used a few Kalamata olives because I needed to use them up!

Instructions

 

  • Pre-heat the oven to 400°F (200°C). In a large, oven-safe skillet, sauté pan, or Dutch oven, heat one teaspoon of olive oil over medium-high heat. Add the sliced chorizo chicken sausage and stir to coat with oil. Cook for 2-3 minutes, stirring occasionally until the sausage has browned slightly on both sides, developing a rich crust. Remove the browned sausage to a side plate, reserving any drippings in the pan.
  • Add the remaining two teaspoons of olive oil to the same pan, along with the diced onion. Stir well to coat the onions with oil and cook for 3-4 minutes, stirring occasionally, until they begin to soften and become translucent. Next, add the minced garlic and the uncooked whole grain wild rice blend to the pan. Stir continuously for an additional 3-4 minutes, allowing the rice to toast slightly and release its nutty aroma. Carefully pour in the water and the roasted tomato salsa, then return the reserved sausage to the pan. Stir all ingredients together thoroughly to ensure they are well combined.
