Ingredients

  • 4 slices center cut bacon
  • 1 large raw egg
  • 3 large raw egg whites
  • 2 tablespoons water
  • Salt and pepper, to taste
  • 1 cup fresh spinach
  • 2 Flatout Light Original Flatbreads
  • 2 oz 50% reduced fat Sharp Cheddar cheese, shredded (I used Cabot)
  • 2 tablespoons sugar free pancake syrup, I used Mrs. Butterworth

Instructions

  1. Begin by cooking the center-cut bacon. Follow your package directions, ensuring it reaches your desired level of crispness. Once cooked, transfer the bacon slices to a plate lined with paper towels to drain excess fat.
  2. In a medium mixing bowl, crack the large egg and add the three egg whites. Pour in the water and whisk vigorously until the mixture is well combined and slightly frothy. Season generously with salt and freshly ground black pepper to your taste preferences.
  3. Lightly mist a non-stick skillet with cooking spray and place it over medium heat. Add the fresh spinach and allow it to wilt, stirring occasionally with a spatula, until it’s tender and vibrant green. Pour the egg mixture into the pan over the spinach. As the bottom of the egg mixture begins to set, use your spatula to gently push and fold the eggs and spinach, scrambling them until they are cooked through and wonderfully fluffy.
