In our household, this recipe holds a special place, affectionately known as “Claire’s Famous Meatloaf.” The name honors my five-year-old daughter, Claire, whose enthusiasm for this dinner is unmatched. She loves to assist in its preparation, making it a cherished family activity. The inspiration for this flavorful creation traces back to The Disney Princess Cookbook (affiliate link), where we discovered Tiana’s Bayou Meatloaf. While we’ve made numerous modifications to the original, the bold and captivating essence of Tiana’s New Orleans-inspired flavors undeniably shines through in every bite.
Our adaptation significantly enhances the spice profile, boosting the quantities of each seasoning to achieve a more robust and authentic Cajun taste. We’ve also opted for dried onion over fresh, ensuring a consistent texture and simplifying preparation. Perhaps the most significant change, however, is the replacement of the original honey-ketchup topping with our homemade, rich, and spicy Cajun gravy – a true game-changer that complements the meatloaf perfectly. To further lighten the dish without sacrificing flavor, I swapped the traditional ground pork for lean ground turkey breast and reduced the amounts of ketchup, milk, and breadcrumbs. The result is a lighter, yet incredibly flavorful and satisfying meatloaf that I genuinely believe you and your family will adore. This recipe truly takes the humble meatloaf and transforms it into a culinary centerpiece worthy of any dinner table, bringing the vibrant spirit of Louisiana into your home.

Essential Ingredient Notes for Your Perfect Meatloaf
Understanding your ingredients is key to perfecting any recipe, and this Louisiana Meatloaf is no exception. Here’s a closer look at some of the core components and why they’re chosen:
- The Meat Blend: For this recipe, I find that a combination of lean ground turkey breast and lean ground beef yields the most delicious results, offering a fantastic balance of flavor and texture while keeping the dish light. The ground turkey contributes a light, savory base, while the ground beef adds a depth of richness that is essential for a truly satisfying meatloaf. We’ve also successfully substituted ground chicken for the ground turkey, achieving equally delightful outcomes. If you prefer, using all ground beef is certainly an option, though it will naturally alter the nutritional information and Weight Watchers Points. The goal is a moist, flavorful meatloaf, and this blend achieves it beautifully.
- Better Than Bouillon: This ingredient is a true kitchen secret for elevating the flavor of countless dishes, especially gravies and sauces. While you can certainly use powdered bouillon or cubes as a substitute, I cannot stress enough how highly I recommend purchasing Better Than Bouillon. Unlike its powdered counterparts, BTB is a concentrated paste that delivers an unparalleled depth and richness of flavor, making a significant difference in the final taste of your Cajun gravy. I’ve found it readily available in virtually every grocery store, from large chains to smaller local markets, so finding it should be quite easy. I personally keep the chicken, beef, and vegetable bases in my fridge at all times, as they are indispensable for adding robust flavor to soups, stews, and, of course, gravy.
- Gravy Master: For achieving that perfect, rich brown color and enhancing the savory notes in your gravy, Gravy Master is my go-to. This seasoning and browning sauce adds an essential layer of flavor and a beautiful, appetizing hue that truly completes the gravy. It’s a small addition that makes a big visual and taste impact. Should you have Kitchen Bouquet on hand, it’s a very similar product from a different brand and can be used interchangeably with excellent results. These browning sauces are designed to deepen the color and flavor profile, creating a more professional-looking and tasting gravy.
- Light Butter: In our kitchen, Land-O-Lakes Light Butter Spread with Canola Oil is a staple. I consistently keep a tub in my fridge because it serves as my primary butter product for both cooking and spreading. It performs exceptionally well in recipes, contributing the necessary fat and flavor without the higher calorie and point count of traditional butter. This makes it an ideal choice for recipes where you want to maintain a lighter profile without compromising on taste or texture. Its smooth consistency also makes it easy to work with in sauces and baking.
- Dried Chopped/Minced Onion: This ingredient is a true time-saver and a fantastic choice for meatloaf. You’ll find it conveniently located with the dry spices in any grocery store, though it might be labeled as “chopped onion” or “minced onion” depending on the brand. My personal preference for using dried onion in meatloaf, rather than fresh, stems from the desire for consistent texture. Unless I have the time to meticulously cook fresh onions beforehand, I often find that raw onions added directly to the meatloaf mix don’t always soften to my liking during baking. Dried onion completely sidesteps this issue, rehydrating in the meat mixture and integrating seamlessly, providing a lovely onion flavor without any unwelcome crunch. It’s a simple swap that guarantees a smooth, perfectly textured meatloaf every time.

Ingredients
- 2 large eggs
- 1 lb 99% lean ground turkey breast
- 1 lb 95% lean ground beef
- 2 tablespoons dry minced/chopped onion (found by the dried spices, different brands call it minced or chopped)
- 1 ¼ teaspoons celery salt
- 1 ¼ teaspoons garlic powder
- 1 ¼ teaspoons dried thyme
- 1 ¼ teaspoons paprika
- ¼ teaspoon black pepper
- ¾ cup plain dry breadcrumbs
- ¼ cup skim milk
- ¼ cup ketchup
- ¼ cup all-purpose flour
- 1 ½ teaspoons Cajun seasoning (found by the spices)
- 4 tablespoons light butter (I use Land O’Lakes light butter spread with canola oil)
- 2 cups reduced sodium beef broth
- 1 teaspoon Better Than Bouillon Beef Base (you can also use powdered bouillon or a bouillon cube, but I highly recommend BTB, it’s awesome)
- ½ teaspoon Gravy Master Seasoning and Browning Sauce
Instructions
- Pre-heat the oven to 350 degrees F (175 C). Lightly mist a 2-quart casserole dish (a 7×11 Pyrex works well) with cooking spray and set aside.
- Crack the eggs into a large mixing bowl and lightly beat with a fork. Add the ground turkey and ground beef, then gently mush them together until just combined.
- In a small bowl, thoroughly mix together the dried minced onion, celery salt, garlic powder, thyme, paprika, and black pepper. Pour this spice mixture over the meat in the large mixing bowl. Add the breadcrumbs, skim milk, and ketchup to the bowl. Using clean hands or a fork, mix all ingredients together until everything is well combined and uniform. Transfer the meat mixture to the prepared casserole dish and spread evenly throughout the dish, shaping it into a loaf.
- Transfer the casserole dish to the preheated oven and cook for 45-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160 degrees F (71 C).
- When the meatloaf has about 10 minutes left to cook, begin preparing the Cajun gravy. In a small dish, stir together the all-purpose flour and Cajun seasoning until thoroughly combined. Melt the light butter in a medium saucepan over medium heat. Once the butter is melted and sizzling gently, gradually whisk in the Cajun flour mixture, a little at a time, to create a roux. Cook for 1-2 minutes, stirring occasionally, allowing the flour to cook out. Slowly add the reduced sodium beef broth, a bit at a time, whisking continuously to ensure a smooth, lump-free mixture. Stir in the Better Than Bouillon Beef Base and Gravy Master. Continue to whisk regularly until the gravy comes to a boil and visibly thickens to your desired consistency. Remove the saucepan from the heat and allow the gravy to sit for at least 5 minutes to thicken further as it cools slightly.
- Once the meatloaf is ready, carefully remove it from the oven and let it rest for a few minutes before slicing. Slice it into 12 equal slices. Each serving consists of 2 slices of meatloaf and 1/3 cup of the delicious Cajun gravy.
