Easy & Healthy Homemade Chicken Shawarma Wraps
Craving the vibrant, aromatic flavors of traditional chicken shawarma but prefer the comfort and ease of your own kitchen? Look no further! These Homemade Chicken Shawarma Wraps bring the authentic taste of this beloved Middle Eastern street food right to your dining table, without the need for a vertical spit. Our recipe focuses on simplicity, health, and incredible flavor, making it a perfect choice for a weeknight dinner or a crowd-plepleasing gathering.
While classic shawarma often features meats slow-cooked on a rotating vertical spit, this recipe masterfully adapts the method for home cooks, utilizing oven-roasting to achieve perfectly tender and flavorful chicken. If grilling is more your style, this versatile marinade works wonderfully on the barbecue too, offering delicious results either way. We’ve enhanced a fantastic marinade recipe, originally discovered in the NY Times Cooking app, by opting for lean chicken breasts instead of thighs. This simple swap significantly lightens the dish without compromising on taste, ensuring each bite is packed with savory goodness and fewer calories.
Each wrap is a symphony of textures and tastes: succulent, spice-infused chicken, caramelized roasted onions, crisp lettuce, juicy tomatoes, refreshing cucumbers, fresh parsley, and a creamy, tangy homemade white sauce, all nestled in a soft pita. The best part? This entire flavorful package, brimming with fresh ingredients, is incredibly diet-friendly, coming in at just 298 calories or 4 WW Points on the current Weight Watchers plan. Eating healthy has never been so satisfying!

Key Ingredients for Perfect Chicken Shawarma Wraps
Achieving the best possible flavor and texture in your homemade shawarma wraps starts with selecting and preparing the right ingredients. Here’s a detailed look at the core components:
- Chicken Cutlets: For this recipe, boneless, skinless chicken breast cutlets are the star. It’s crucial that these are uniformly sliced to about ½ inch thick. Why? Because consistent thickness guarantees even cooking. If some parts are thinner than others, they’ll dry out before the thicker sections are fully cooked, resulting in an inconsistent texture. You can easily find pre-sliced chicken breast cutlets at most grocery stores, or you can prepare them yourself. Simply slice full-sized chicken breasts horizontally to create two thinner cutlets. If needed, a gentle pounding with a meat mallet can help achieve that perfect, even thickness. This ensures every piece of chicken is juicy and tender after roasting or grilling.
- Pita Bread: The foundation of any great wrap is the bread. We highly recommend Joseph’s Flax, Oat Bran and Whole Wheat Pita Bread. These pitas are not only delicious, offering a subtle nutty flavor and soft texture, but they are also perfectly sized for wraps and impressively low in calories—just 60 calories or 1 WW Point each! They’re readily available at stores like Wegmans and Walmart, making them an accessible choice for many. If you opt for a different brand or type of pita, remember to re-calculate the WW Points and estimated nutritional information to fit your dietary goals. Whole wheat pitas are generally a healthier choice, providing more fiber.
- Creamy White Sauce: A quintessential element of any shawarma wrap is the cooling, tangy white sauce. Our version combines the classic elements with a few enhancements for an unforgettable flavor. We start with plain fat-free Greek yogurt, which provides a wonderful tang and creamy base, along with a good dose of protein. Fresh lemon juice adds essential brightness and acidity, while minced garlic infuses it with a pungent depth. To elevate the flavor profile, we incorporate light mayonnaise for extra richness and stirred tahini for a distinct nutty, earthy sesame note. Tahini is a staple in Middle Eastern cuisine and truly makes this sauce special. If tahini isn’t on hand, you can still make a delicious sauce without it, but we encourage its inclusion for an authentic taste. Always remember to stir or shake tahini well before using, as it tends to separate.
- Optional Fresh Additions: Our recommended Chicken Shawarma Wraps are generously filled with roasted chicken and onions, crisp green leaf lettuce, ripe tomato slices, refreshing cucumber, and a sprinkle of fresh parsley, all drizzled with our homemade white sauce. However, one of the beauties of this dish is its adaptability. Feel free to customize your wrap to your preference. If you or your family members aren’t keen on a particular vegetable (like cucumbers, for my husband!), simply omit it. For those looking to add even more flavor and variety, consider incorporating ingredients such as briny olives, crumbled Feta cheese, creamy hummus, thinly sliced bell peppers for a sweet crunch, or a dash of hot sauce if you enjoy a spicy kick.
Crafting the Perfect Shawarma Marinade
The heart of any delicious shawarma lies in its marinade. This meticulously balanced blend of spices not only infuses the chicken with incredible flavor but also helps to tenderize it, ensuring every bite is moist and juicy. Our marinade draws inspiration from traditional Middle Eastern spice mixes, creating a symphony of aromas and tastes.
- Lemon Juice: Freshly squeezed lemon juice is paramount. Its acidity works wonders as a tenderizer, breaking down the chicken fibers while also adding a bright, zesty counterpoint to the rich spices.
- Olive Oil: High-quality olive oil forms the base of the marinade, carrying the fat-soluble flavors of the spices and helping them adhere to the chicken. It also contributes to the chicken’s tenderness and helps it achieve a beautiful golden crust when roasted.
- Garlic Cloves: Minced garlic is a non-negotiable. Its pungent, aromatic flavor is fundamental to shawarma and permeates the chicken beautifully during marination.
- Kosher Salt & Freshly Ground Black Pepper: These foundational seasonings enhance all the other flavors, ensuring the chicken is perfectly seasoned from the inside out.
- Ground Cumin: Cumin provides an earthy, warm, and slightly nutty flavor that is characteristic of Middle Eastern cuisine. It’s a key player in the shawarma spice blend.
- Paprika: Paprika adds a lovely depth of flavor and a subtle sweetness, alongside a beautiful reddish hue to the chicken. You can use sweet or smoked paprika depending on your preference.
- Turmeric: Beyond its vibrant golden color, turmeric contributes a mild, earthy, and slightly peppery flavor. It’s also known for its health benefits.
- Cinnamon: Just a pinch of cinnamon might surprise some, but it’s a secret ingredient in many Middle Eastern savory dishes. It adds a subtle warmth and aromatic complexity that rounds out the spice profile without being overpowering.
- Crushed Red Pepper Flakes: For those who appreciate a touch of heat, ¼ to ½ teaspoon of crushed red pepper flakes provides a gentle warmth that complements the other spices beautifully. Adjust to your desired level of spice.
Recipe Tips for Shawarma Success
To ensure your Chicken Shawarma Wraps turn out perfectly every time, keep these valuable tips in mind:
- Precise Chicken Amount: After cooking, the total weight of the chicken was 1 lb 7 oz, which translates into eight servings of approximately 2.875 oz each. This precise measurement helps in consistent portioning for each wrap and accurate nutritional tracking. While striving for exactness, if your slices are slightly under or over, aim for a range between 2.75 to 3 ounces per wrap. This flexibility ensures all eight wraps are generously filled without compromising the overall recipe balance.
- Optimal Marinating Time: The marinade is where the magic happens! For maximum flavor absorption and truly tender chicken, we highly recommend marinating the chicken breast cutlets for at least 2 hours, and ideally, up to 12 hours. Preparing the marinade and chicken in the morning allows it to soak up all those delicious spices throughout the day, ready for cooking at dinner time. If you’re short on time, even a shorter marination period will yield tasty results, but the longer it marinates, the deeper and richer the flavor will be.
- Versatile Chicken Usage: While these marinated chicken cutlets are designed for incredible shawarma wraps, their versatility extends far beyond. If you find yourself without pita bread, or simply wish to enjoy the chicken in a different way, consider serving it atop a fresh, vibrant salad—it pairs wonderfully with a bright Greek vinaigrette. Alternatively, it can be a fantastic protein component alongside fluffy rice, quinoa, or other grains, creating a complete and satisfying meal. You can also dice it and add it to pasta dishes, use it in stir-fries, or even make delicious shawarma-inspired tacos or quesadillas. It’s a great option for healthy meal prep throughout the week.
- Alternative Cooking Methods: While oven-roasting provides a convenient and consistent cook, you can also grill the chicken for an extra smoky flavor, or pan-fry it for a quick meal. If grilling, ensure the chicken is thinly sliced to cook quickly and evenly. For pan-frying, a hot skillet with a touch of oil will yield beautifully seared chicken.
- Twine for Presentation: In the photos, you might notice the wraps are tied with butcher’s twine. This is purely for aesthetic purposes, helping the wraps maintain their neatly folded shape for photography. Feel free to use twine if you’d like to present them similarly for guests, but it is absolutely not necessary for enjoying these delicious wraps.

Accurate Tracking: Calculating Marinade Absorption for Nutrition
One common challenge when calculating nutritional information and Weight Watchers Points for recipes involving marinades is accounting for absorption. As mentioned, this delicious marinade from The New York Times cooking app is packed with flavor, and the chicken does absorb some of it. However, a significant portion of the marinade is typically discarded, making precise calculations tricky if you simply include all marinade ingredients in your nutrition count.
My preferred method for estimating marinade absorption, which provides a reasonably accurate estimate for WW Points and nutritional data, involves weighing the marinade. Here’s how it works:
- Weigh the Marinade Initially: Before adding the chicken (or any other ingredients), weigh the total amount of marinade in its container (e.g., a zip-top bag or mixing bowl). Record this initial weight.
- Marinate and Remove Chicken: Proceed with marinating your chicken for the recommended time. Once marination is complete, carefully lift the chicken out, allowing any excess marinade to drip back into the container, and transfer it for cooking.
- Weigh Remaining Marinade: Weigh the marinade that is left in the container. This includes any liquid that wasn’t absorbed by the chicken and was not discarded during the transfer.
- Calculate Absorption Percentage: Compare the initial weight of the marinade to the final weight. For this specific recipe, after marinating the chicken and tossing the onions in the remaining marinade, approximately 60% of the initial marinade weight remained. This means roughly 40% of the marinade was absorbed by the chicken or adhered to the onions.
- Adjust Nutritional Calculations: When calculating WW Points and nutrition information, I then use this absorption percentage. Instead of counting 100% of the marinade ingredients, I calculate using approximately 40% of each marinade ingredient’s values. This approach might not be perfectly exact down to the last calorie, but it offers a much better and more realistic estimate of the nutrients actually consumed, making it a reliable method for those tracking their intake. It ensures that the points and calories reflect what’s truly incorporated into your meal, rather than including discarded liquids.

Ingredients
Marinade
- 2 lemons, juiced
- ½ cup olive oil
- 6 garlic cloves, minced
- 1 teaspoon kosher salt
- 2 teaspoons freshly ground black pepper
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- ½ teaspoon turmeric
- a pinch cinnamon
- ¼ – ½ teaspoon crushed red pepper flakes
Other Ingredients
- 2 lbs boneless skinless chicken breast cutlets, ( ½” thick)
- 1 medium red onion, peeled and cut into eight wedges
- ¾ cup plain fat free Greek yogurt, (I use Fage 0%)
- 2 tablespoons light mayonnaise, (I use Hellmanns)
- 1 tablespoon lemon juice
- 1 tablespoon tahini, stirred
- ¼ teaspoon garlic powder
- 8 pitas, (I use Joseph’s Flax, Oat Bran and Whole Wheat Pita Bread)
- 8 leaves green leaf lettuce
- 2 medium tomatoes, thinly sliced
- ½ medium cucumber, thinly sliced
- 2 tablespoons chopped fresh parsley
Instructions
-
In a medium mixing bowl, combine all the marinade ingredients: juiced lemons, olive oil, minced garlic cloves, kosher salt, freshly ground black pepper, ground cumin, paprika, turmeric, a pinch of cinnamon, and crushed red pepper flakes. Whisk vigorously until all ingredients are thoroughly combined. Place the chicken breast cutlets into a large zip-top bag and pour the prepared marinade over the chicken. Seal the bag, ensuring to press out any excess air, and then gently toss or massage the contents so that each chicken piece is completely coated in the flavorful marinade. Transfer the sealed bag to the refrigerator and allow the chicken to marinate for a minimum of 2 hours, or ideally up to 12 hours, for maximum flavor infusion.
-
Once the marinating time is complete and you are ready to cook, preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with foil or parchment paper for easy cleanup. Carefully lift each chicken cutlet out of the marinade, allowing any excess marinade to drip back into the bag before placing the chicken onto the prepared baking sheet. After all the chicken is removed, add the red onion wedges into the remaining marinade in the bag and toss them until they are well coated. Then, transfer these marinated onion pieces onto the same baking sheet, spreading them out evenly alongside the chicken.
-
Once the oven has reached the desired temperature, carefully place the baking sheet inside. Roast the chicken and onions for 16-22 minutes, or until the chicken cutlets are thoroughly cooked through and reach an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius). To achieve a beautiful golden-brown finish and perfectly caramelized onions, turn the oven to broil for an additional 1-2 minutes. Keep a close eye on it to prevent burning. After cooking, remove the baking sheet from the oven and allow the chicken to rest for 10 minutes before slicing. This resting period is crucial as it allows the juices to redistribute throughout the meat, ensuring the chicken remains incredibly tender and moist. Once rested, thinly slice the chicken into strips, perfect for your wraps.
-
While the chicken is resting, prepare your creamy white sauce. In a small mixing bowl, combine the plain fat-free Greek yogurt, light mayonnaise, fresh lemon juice, well-stirred tahini, and garlic powder. Stir all the ingredients together vigorously until they are thoroughly combined, smooth, and creamy. This sauce is the perfect tangy and rich accompaniment to your shawarma.
-
To assemble each delicious Chicken Shawarma Wrap, lay one pita bread flat on a clean, dry surface. Begin by layering 1 large green leaf lettuce leaf down the center. Follow with 1-2 thinly sliced tomato pieces, stacked in a neat line. On top of the tomatoes, arrange a row of thinly sliced cucumbers. Next, add about 1/8th of the roasted onions, spreading them evenly. Crown this vegetable base with approximately 2.875 ounces of the thinly sliced, juicy chicken. Finally, generously drizzle two tablespoons of the homemade white sauce over the chicken and vegetables. Garnish with a sprinkle of chopped fresh parsley. Carefully fold or roll your pita to form a wrap and serve immediately. Repeat this process with the remaining ingredients to create all 8 satisfying wraps.
