Ingredients

  • 1 medium ear of fresh raw corn
  • 1 tablespoon light butter (we recommend Land O’Lakes for its quality)
  • 1 cup thin sliced zucchini
  • 8 large eggs
  • 1/3 cup 2% plain Greek yogurt (Fage is a great choice for creaminess)
  • ¾ teaspoon salt, plus a sprinkle more for the corn & zucchini
  • ¼ teaspoon black pepper, plus a sprinkle more for the corn & zucchini
  • 1 tablespoon diced chives
  • ¼ cup sliced fresh basil
  • 2 oz sharp cheddar cheese, shredded (Cabot Seriously Sharp works wonderfully here)

Instructions

  1. Pre-heat your oven to 350°F (175°C). Shuck the corn, removing any silks. Using a large sharp knife, carefully cut the kernels from the cob as close as possible (this should yield about 1 cup of kernels).
  2. Melt the light butter in an 8-inch to 10-inch oven-safe nonstick deep skillet over medium-low heat. Add the corn kernels and thinly sliced zucchini, stirring to ensure they are evenly coated. Season with a sprinkle of salt and pepper to taste. Cook, stirring regularly, for 6-8 minutes, or until the corn and zucchini are tender and lightly cooked through. Avoid overcooking to maintain their fresh texture.
  3. While the vegetables are cooking, crack the large eggs into a spacious mixing bowl. Whisk them gently until they are just combined and slightly frothy. Incorporate the Greek yogurt, ¾ teaspoon salt, ¼ teaspoon black pepper, diced chives, sliced fresh basil, and the shredded sharp cheddar cheese. Stir everything together until all ingredients are well mixed.
  4. Once the corn and zucchini are perfectly cooked, carefully transfer them from the skillet into the bowl with the egg mixture and stir to combine. Liberally spray the same skillet you used with cooking spray to prevent sticking. Pour the entire egg and vegetable mixture back into the skillet. Cook on a burner set to medium heat for 5-7 minutes. You’ll know it’s time for the oven when the very outside edge of the frittata begins to turn opaque and look set. Transfer the skillet into your pre-heated oven and bake for an additional 15-17 minutes, or until the center of the frittata is completely set and no longer jiggly. Let it cool in the skillet for 5 minutes before slicing it into 6 equal portions and serving warm.
