  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 teaspoons finely chopped fresh rosemary leaves
  • 2 large garlic cloves, peeled and smashed under the flat side of a knife
  • 5 teaspoons olive oil, divided
  • 2 oz crumbled Feta cheese
  • ¾ teaspoon fresh thyme leaves, divided
  • ½ cup red wine
  • 1 ½ cups fresh blackberries
  • 2 teaspoons honey

Instructions

  1. Begin by preparing your chicken cutlets. Sprinkle both sides generously with salt and black pepper. Place them in a clean mixing bowl. Add the finely chopped fresh rosemary, the two smashed garlic cloves, and one tablespoon of the olive oil. Using clean hands, gently mix and massage these aromatic ingredients into the chicken cutlets, ensuring each piece is thoroughly coated. This step is crucial for infusing the chicken with deep flavor. Once coated, cover the bowl and refrigerate for 30 to 60 minutes to allow the flavors to meld beautifully. After the chilling time, carefully remove and discard the smashed garlic clove pieces from the chicken.

  2. Heat a large sauté pan over medium-high heat. Drizzle the remaining two teaspoons of olive oil into the pan. Once the oil is shimmering and hot, carefully lay the chicken breasts in a single layer, ensuring not to overcrowd the pan. Cook the chicken for 4-5 minutes per side, until they are beautifully golden brown on the bottom and cooked through to an internal temperature of 165°F (74°C). Once you flip the breasts to the second side, immediately sprinkle the crumbled Feta cheese evenly over the top (the already cooked side) of each breast. Follow this by sprinkling ½ teaspoon (total) of the fresh thyme leaves over the cheesy chicken. Continue cooking for another 4-5 minutes. When fully cooked, transfer the chicken to a side plate and cover it loosely with foil to keep it warm while you prepare the compote.

  3. With the chicken removed, add the red wine to the same pan. Stir well, using a wooden spoon to scrape up any flavorful browned bits (fond) from the bottom of the pan – this adds incredible depth to your compote. The wine will likely come to a boil almost immediately. Reduce the heat to medium and let the wine simmer until it has reduced by half, a process that typically takes just a couple of minutes. Next, add the fresh blackberries, honey, and the remaining ¼ teaspoon of thyme leaves to the pan. Stir everything together to combine. Continue to cook for about 3 minutes, gently stirring and lightly smashing some of the berries every minute or so with your wooden spoon to create a rustic, smashed blackberry compote. For interesting texture, I like to leave a few whole blackberries intact.

  4. To serve, place one Feta-topped chicken breast on each plate. Accompany it with 2 ½ tablespoons of the warm blackberry compote. You can serve the compote elegantly on the side, allowing guests to add it as desired, or spoon it generously over the top of the chicken for a stunning presentation and an immediate burst of sweet and savory flavor in every bite.
