These flavorful steak pieces are then nestled into crisp, cool lettuce cups, ready to be topped with a medley of fresh vegetables. It’s a combination that hits all the right notes – an ideal solution for a quick yet gourmet-feeling weeknight meal, and the leftovers are fantastic for a convenient and healthy lunch the next day. Why You’ll Love These Teriyaki Steak Lettuce Wraps

These aren’t just any lettuce wraps; they are a culinary triumph designed for both taste and convenience. Here’s why they’re destined to become a staple in your kitchen:

  • Effortlessly Delicious: With a total time of just 25 minutes, these wraps are perfect for busy evenings when you crave something homemade but quick. The active cooking time is minimal, allowing you to get a gourmet meal on the table without the fuss.
  • Fresh and Flavorful: The combination of tender teriyaki steak with crisp lettuce and crunchy toppings creates a dynamic texture and a burst of fresh flavors in every bite. It’s a lighter alternative to heavier meals, leaving you feeling satisfied but not stuffed.
  • Healthy & Weight Watchers Friendly: Packed with lean protein and fresh vegetables, these wraps are a smart choice for a healthy lifestyle. Their low-calorie and low-Point value make them incredibly versatile for various dietary plans, especially Weight Watchers.
  • Versatile Toppings: While we suggest a delicious combination of scallions, broccoli slaw, and sprouts, the beauty of these wraps lies in their adaptability. You can easily customize them with your favorite crisp vegetables, making each meal a unique experience.
  • Amazing Leftovers: Unlike many dishes that lose their appeal the next day, these teriyaki steak wraps hold up beautifully. The steak reheats well, and keeping the lettuce and toppings separate ensures a fresh, crunchy lunch.

Crafting the Perfect Homemade Teriyaki Sauce

The heart of these Teriyaki Steak Lettuce Wraps truly lies in the sauce. Forget bottled varieties that are often loaded with excess sugar and sodium; our homemade version is simple, fresh, and perfectly balanced. It’s a close cousin to the beloved sauce from my Teriyaki Chicken and Rice Casserole, ensuring a depth of flavor that complements the steak beautifully.

This rich sauce combines the umami of low-sodium soy sauce with the sweetness of brown sugar and honey, brightened by a hint of ground ginger and savory minced garlic. A touch of canola oil helps meld the flavors, and a cornstarch slurry ensures it thickens to the perfect glossy consistency that clings to every piece of steak. The process is straightforward: simmer the ingredients, thicken, and then let it work its magic on the steak. This simple step elevates the entire dish, proving that homemade doesn’t have to mean complicated.

Choosing and Preparing Your Steak

For these Teriyaki Steak Lettuce Wraps, lean, trimmed flank steak is our cut of choice. Flank steak is known for its robust beefy flavor and its ability to absorb marinades and sauces beautifully. When cooked properly, it offers a wonderfully tender texture. The key to tenderness with flank steak is in how you slice it. Always slice against the grain, which means cutting perpendicular to the muscle fibers. This shortens the fibers, making the steak much easier to chew and more enjoyable in a wrap.

Other suitable cuts could include skirt steak or sirloin, but ensure they are lean and trimmed of excess fat to keep the dish light and healthy. When cooking, searing the steak in a hot skillet for just a few minutes ensures a delicious crust while keeping the interior juicy. The thin strips cook very quickly, which contributes to the overall speed of this recipe. Once seared, the steak is tossed with our exquisite homemade teriyaki sauce, ensuring every piece is coated in savory goodness.

Customizing Your Lettuce Wraps: Toppings and Greens

One of the most enjoyable aspects of these wraps is the freedom to customize. While our base recipe calls for crisp Boston or Bibb lettuce leaves, which are perfect for their pliable yet sturdy nature, you can also experiment with other greens like romaine hearts for a firmer crunch or even large cabbage leaves if you prefer.

For toppings, we love the fresh crunch and mild oniony bite of sliced scallions, the earthy texture of undressed broccoli slaw, and the delicate crispness of sprouts. These additions provide a delightful contrast to the warm, savory steak. However, don’t stop there! Feel free to explore other exciting options:

  • Water Chestnuts: For an extra layer of crunch and a hint of sweetness.
  • Shredded Carrots: Adds vibrant color, sweetness, and a lovely crisp texture.
  • Sliced Snow Peas or Sugar Snap Peas: Offers a fresh, green crunch and a subtle sweetness.
  • Bell Peppers: Thinly sliced red or yellow bell peppers bring sweetness and a pop of color.
  • Cucumber: Diced or julienned cucumber provides a refreshing coolness.
  • Toasted Sesame Seeds: A classic Asian-inspired garnish that adds nutty flavor and visual appeal.
  • A Drizzle of Sriracha or Chili Garlic Sauce: For those who enjoy a little extra heat.

Mixing and matching these toppings allows you to tailor each wrap to your personal preference, making dinner an interactive and exciting experience for everyone at the table.

Serving Suggestions & Meal Prep Tips

These Teriyaki Steak Lettuce Wraps are incredibly satisfying on their own as a light meal, but they can also be part of a larger spread. For a more substantial dinner, consider serving them alongside:

  • A side of steamed brown rice or quinoa.
  • A simple Asian-inspired cucumber salad.
  • Extra steamed or stir-fried vegetables like snap peas, bok choy, or edamame.

One of the best features of this recipe is its meal prep potential. The steak can be cooked and sauced ahead of time, then stored in an airtight container in the refrigerator for up to 3-4 days. The lettuce leaves should be washed, dried, and stored separately to maintain their crispness. All your chosen toppings can also be prepped and stored in individual containers. When it’s time to eat, simply reheat the steak gently (or enjoy it cold!), assemble your wraps, and you have a fresh, healthy meal ready in minutes. This makes it a fantastic option for busy individuals or anyone looking to streamline their weekly meal planning.

Ingredients

  • 1/3 cup low sodium soy sauce
  • ¼ cup water
  • 2 tablespoons packed brown sugar
  • 1 teaspoon honey
  • ½ teaspoon ground ginger
  • 1 tablespoon + ½ teaspoon canola oil, divided
  • ½ teaspoon minced garlic
  • 1 tablespoon cornstarch
  • 1 tablespoon water (for slurry)
  • 1 ½ lbs lean, trimmed flank steak, cut into thin strips
  • 18 leaves Boston or Bibb lettuce
  • 1 scallion, sliced
  • ¾ cup undressed broccoli slaw
  • ¼ cup sprouts

Instructions

  1. Combine the soy sauce, the ¼ cup water, the brown sugar, honey, ginger, ½ teaspoon of canola oil, and garlic in a small saucepan. Cover and bring to a boil over medium heat. Once boiling, remove the lid and cook for one minute.
  2. While the sauce is heating, stir together the cornstarch and 1 tablespoon of water in a separate small dish until smooth to form a slurry. Once the sauce is boiling, add the slurry to the saucepan and stir to combine. Cook for another minute, stirring continuously, until the sauce starts to thicken. Remove from heat.
  3. Heat one tablespoon of canola oil in a large skillet over medium heat. Add the steak strips and stir to coat with the oil. Cook, stirring and flipping occasionally, for about 5 minutes or until the steak is cooked to your desired doneness. Add the prepared teriyaki sauce from step 2 and stir to coat all the steak pieces. Cook for another minute or two, allowing the sauce to fully coat the steak, then remove from heat.
  4. To build the lettuce wraps: Each serving is approximately 3 1/3 ounces of steak. Place a little over an ounce of sauced steak into each lettuce leaf. Top each with a sprinkling of sliced scallions, two teaspoons of broccoli slaw, and a sprinkle of sprouts. Serve immediately. One serving consists of three lettuce wraps.
