  • 5 tablespoons light butter, I use Land O’Lakes
  • 2 cups fat free half-and-half
  • 16 oz package of gnocchi, I used Wegmans mini gnocchi, but regular-sized gnocchi are just fine!
  • 2 cups torn fresh spinach leaves

Sauté for about 3-5 minutes, or until the onions have softened and become translucent, and the garlic is fragrant. Pour in the chicken broth and water, then increase the heat to bring the liquid to a rolling boil. Carefully add the boneless, skinless chicken breasts, chopped carrots, chopped celery, dried rosemary, dried thyme, and a pinch of nutmeg. Once the soup begins to bubble again, reduce the heat to a gentle simmer, cover the pot, and cook for 25-30 minutes. This will ensure the chicken breasts are cooked through and the vegetables are tender.
  2. Approximately 10 minutes before the chicken and vegetables are finished simmering, prepare the creamy thickening agent.
