Ingredients
- 4 oz French bread baguette, sliced diagonally into eight ½ oz slices (about ½” thick)
- 3 oz goat cheese, (I used Vermont Creamery Classic)
- 8 fresh strawberries, sliced
- 1 tablespoon finely sliced fresh basil, loose, not packed
- 1 teaspoon balsamic glaze, (I used Wegmans brand, but Bertolli, Gia Russa, Delallo, Roland and lots of other brands sell one)
Instructions
- Pre-heat the oven to 400°F (200°C). Arrange the baguette slices on a foil-lined baking sheet. Lightly spray the tops of the slices with cooking spray. Flip them over and spray the other side as well to ensure even crispness. Bake for 10-14 minutes, or until the edges turn a beautiful golden brown. Remove from the oven and allow them to cool for a few minutes until they are easy to handle.
- Once cooled, spread an even layer of goat cheese on each toasted baguette slice. Top each piece with a single sliced strawberry. Sprinkle the finely sliced fresh basil generously over the strawberries. Finally, drizzle each bruschetta with a light zig-zag squiggle of balsamic glaze. A simple trick is to hold a teaspoon under the bottle as you drizzle over all 8 baguette slices; this typically measures out to about one teaspoon total. Serve immediately to enjoy the freshest flavors.
- *Pro Tip for Convenience: If you’re preparing this bruschetta for a quick snack and only need one or two pieces, you have options. You can either toast all the baguette slices at once and store them in a sealed Ziploc bag for several days, assembling them as needed. Alternatively, you can toast only the amount of baguette slices you require at that moment. I personally prefer to toast the entire batch in advance; it makes building a quick snack incredibly fast, taking only a minute or two to assemble.
