- 4 garlic cloves, minced (freshly minced garlic offers the best flavor)
- 1/3 cup fat free reduced sodium chicken broth (provides a savory base without excess fat)
- 1 (19 oz) can Cannellini beans, drained and rinsed thoroughly (these white beans offer a creamy texture)
- 3 tablespoons diced scallions, divided (for a fresh, mild onion flavor)
- 1 tablespoon fresh lemon juice (adds brightness and cuts through richness)
- ½ teaspoon hot sauce (I used Sriracha for a modern kick, but Frank’s or your favorite brand works well)
- 1/8 teaspoon salt (adjust to taste after initial seasoning)
- 1/8 teaspoon paprika (adds a subtle smoky note and color)
Instructions
- Place the chopped bacon pieces into a medium saucepan and cook over medium heat. Stir occasionally until the bacon is delightfully crispy. Using a slotted spoon, remove the cooked bacon pieces to a paper towel-lined plate to drain, reserving about 2 teaspoons of bacon grease in the pan. Discard any additional grease if necessary.
- Add the minced garlic to the reserved bacon grease in the saucepan, still over medium heat. Cook for approximately one minute, stirring constantly, until the garlic is golden and fragrant. Be careful not to burn it. Pour in the chicken broth and add the drained and rinsed cannellini beans, stirring well to combine all ingredients. Increase the heat to high and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer for about 10 minutes, allowing the flavors to meld.
- Carefully transfer the bean mixture to a food processor. Add 2 tablespoons of the diced scallions, the fresh lemon juice, hot sauce, salt, and paprika. Process until the mixture is completely smooth and creamy. Spoon the dip into a serving bowl. Stir in the remaining tablespoon of fresh scallions and the majority of the crispy bacon pieces. Sprinkle the remaining bacon pieces on top as a garnish just before serving.
