- 2 oz canned pineapple juice
- ¼ cup light coconut milk
- 2 tablespoons honey

- ½ teaspoon sesame oil
- 2 scallions, chopped
- 1 lb fresh pineapple, cut into bite-sized pieces (Consider using the Pampered Chef Fruit & Cheese Cutter to create fun Hawaiian flower shapes!)
- 1 ½ pounds (24 oz) raw boneless, skinless chicken breasts, cut into bite-sized chunks
- You’ll also need 12” skewers – if using wooden skewers, remember to soak them in water for about 30 minutes before use to prevent burning.

Prepare the Flavorful Marinade: In a medium bowl, combine the low sodium soy sauce, pineapple juice, light coconut milk, honey, minced garlic, grated ginger, sesame oil, and chopped scallions. Whisk thoroughly until all ingredients are well combined, creating your vibrant Hawaiian marinade.Marinate the Chicken: Pour the prepared marinade into a gallon-sized Ziploc bag. Add the bite-sized chicken chunks, seal the bag tightly, and gently shake to ensure the chicken is completely coated in the marinade. Place the sealed bag in the refrigerator, allowing the chicken to soak up all the delicious flavors. Marinate for at least 4 hours, or for an even more intense flavor, I recommend marinating overnight (the chicken will be exceptionally flavorful!).

Pre-heat Your Grill: Before assembling, pre-heat your grill to a hot temperature. While the grill heats, divide the marinated chicken and pineapple pieces evenly among eight 12-inch skewers. Alternate chicken and pineapple for a visually appealing and balanced skewer.Grill to Perfection: Place the skewers directly on the hot grill grates or, if you have one, use a skewer rack over low heat. We experimented with grilling some skewers directly on the grill and others using the Pampered Chef BBQ Corn & Skewer Rack. Both methods yielded excellent results; it simply depends on whether you prefer distinct char marks or a more evenly cooked appearance.Cooking Time: Grilling times can vary based on your specific grill model and heat intensity. On our 4-burner grill, the chicken skewers cooked beautifully in about 10 minutes total. I suggest grilling for approximately 5-6 minutes on one side, then flipping the skewers and continuing to cook for another 4-5 minutes, or until the chicken is thoroughly cooked through and golden brown. Ensure the internal temperature of the chicken reaches 165°F (74°C) for food safety.
