Are you searching for a dinner recipe that consistently delights everyone at your table, even the pickiest eaters? Look no further than these incredible Blackened Chicken Bites! This dish has earned its place as one of my family’s absolute favorite quick and easy weeknight dinners. It’s a recipe I turn to time and again, knowing it delivers on both flavor and convenience. Paired perfectly with simple sides like green beans or broccoli, and a comforting serving of rice – my daughter’s choice is always chicken-flavored rice-a-roni – it creates a balanced and satisfying meal that never disappoints.

While I cherish experimenting with new recipes, having a collection of reliable, crowd-pleasing meals in my culinary arsenal is a true lifesaver. This spicy blackened chicken recipe is a personal longtime favorite, but its appeal extends even to my two-year-old, proving its universal charm. My love for Cajun-spiced chicken isn’t new; Popeye’s blackened chicken tenders have long been a go-to fast-food option for me. Whether I’m enjoying a relaxed evening at home or need a speedy meal on the go, Cajun chicken always wins my heart (and my stomach). Crafting Your Own Cajun Seasoning: Simple Steps for Maximum Flavor

One of the secrets to the irresistible taste of these chicken bites lies in the homemade Cajun seasoning. Don’t let the idea of making your own spice blend intimidate you! It’s an incredibly straightforward process that takes only a few minutes to measure out a handful of common spices. Chances are, you already have most, if not all, of them stocked in your pantry. Crafting your own seasoning allows you to control the freshness and intensity of the flavors, and even adjust the heat level to suit your family’s preferences – more cayenne for a fiery kick or less for a milder experience. This blend is what truly defines the “blackened” character, creating a rich, smoky, and subtly spicy crust on the chicken.

A key ingredient in my seasoning blend is all-purpose flour. Incorporating flour helps create a delightful crispy “crust” around the edges of the chicken pieces as they cook, a texture I’m completely obsessed with. This flour coating also helps the spices adhere beautifully to the chicken, ensuring every bite is bursting with flavor. The blend of paprika, garlic powder, chili powder, oregano, thyme, onion powder, salt, black pepper, and cayenne pepper creates a perfectly balanced profile that is both savory and aromatic, a signature of authentic Cajun cuisine.

Expert Tips for Perfectly Prepped Chicken

When it comes to preparing the chicken, I have a fantastic tip that will save you time and effort: invest in a good pair of kitchen shears! If you don’t already own them, I highly recommend getting a pair. Whether I’m trimming fat from meat or cutting chicken breasts into strips or bite-sized chunks for a recipe, kitchen shears are my go-to tool. They make the process significantly faster and easier than using a knife, offering greater precision and control, especially when dealing with slippery raw chicken. For this recipe, aim for consistently sized bite-sized pieces to ensure even cooking and that coveted crispy exterior. Once cut, the chicken is ready to be tossed with your homemade Cajun spice mix, preparing it for its flavorful transformation.

Cooking to Perfection: Achieving that Signature Blackened Crust

The cooking process for these Blackened Chicken Bites is as simple as the preparation, requiring just a hot skillet and a watchful eye. The goal is to achieve a beautiful, dark, and flavorful crust on the chicken, which is the essence of “blackening.” Begin by heating your olive oil in a large sauté pan or walled skillet over medium-high heat until it shimmers. The high heat is crucial for developing that characteristic crust quickly. Once the oil is hot, add your spice-coated chicken pieces. It’s vital not to overcrowd the pan; if your skillet isn’t large enough to accommodate all the chicken in a single layer with some space between pieces, cook in two batches. Overcrowding lowers the pan’s temperature and steams the chicken instead of browning it, preventing that desirable crispy texture.

Stir the chicken gently to ensure each piece is coated in the hot oil and to separate them. Then, resist the urge to stir constantly! Allow the chicken to cook for a few minutes on each side without disturbance, giving it time to brown and form that delicious “crust.” Stir every couple of minutes to ensure even cooking and browning on all sides. In just 8-10 minutes, your chicken will be cooked through, beautifully browned, and ready to serve. The aroma alone will have your family eagerly awaiting dinner! These bites, once cooked, weighed a little over 18 ounces total. The recipe is designed for 6 servings of 3 ounces each, but this information offers flexibility should you wish to adjust serving sizes to fit your family’s needs.

Ingredients

  • 1 tablespoon all purpose flour
  • 1 ½ teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ¾ teaspoon dried oregano
  • ½ teaspoon ground thyme
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ground cayenne pepper
  • 1 ½ lbs raw boneless skinless chicken breasts, cut into small bite-sized pieces
  • 1 ½ tablespoons olive oil

Instructions

  1. Combine the flour, paprika, garlic powder, chili powder, oregano, thyme, onion powder, salt, black pepper and cayenne in a small dish and stir to combine into a Cajun spice mix. Place the cut up chicken in a zip-seal plastic bag and add the spice mix. Seal the bag and shake/massage the contents until the chicken pieces are coated with the spices.
  2. Add the oil to a large saute pan/walled skillet and bring over med-high heat. Once the oil is hot, add the chicken pieces (you don’t want to overcrowd the pan, so depending on the size of your skillet you may want to work in two batches instead of one) and stir to break them up and coat them in the oil. Cook the chicken for 8-10 minutes, stirring every couple minutes (you don’t want to stir super frequently because the chicken needs time to brown and get a “crust” on each side). Once the chicken is cooked through and browned on the outside, remove from heat and serve.
