Customize Your Comfort: Making This Skillet Your Own

One of the best features of this one-pan tortellini recipe is its incredible adaptability. While the combination of spicy Italian sausage, zucchini, and mushrooms is fantastic, feel free to make it your own based on your preferences or what you have on hand. Don’t like mushrooms? No problem! Not a fan of zucchini? Simply swap it out!

Vegetable Substitutions and Additions:

  • Bell Peppers: Sliced red, yellow, or green bell peppers add sweetness and a vibrant color.
  • Spinach or Kale: Stir in a few handfuls of fresh spinach or chopped kale during the last few minutes of cooking for extra greens.
  • Eggplant: Diced eggplant can absorb the flavors of the sauce beautifully.
  • Carrots: Finely diced carrots add a subtle sweetness and extra nutrients.
  • Broccoli Florets: Small broccoli florets can be added along with the other vegetables.

Protein Variations:

While hot Italian turkey or poultry sausage offers a leaner alternative with a flavorful kick, you can certainly experiment with other proteins:

  • Mild Italian Sausage: For a less spicy option.
  • Ground Pork or Beef: If you prefer traditional ground meat, season it with Italian herbs.
  • Chicken Sausage: Another lean choice, often available in various flavors.
  • Plant-Based Sausage: For a vegetarian-friendly version, simply use a plant-based sausage alternative and ensure your tortellini is meat-free.

Cheese Choices:

The recipe calls for Parmesan and Mozzarella, creating a wonderfully cheesy finish. However, you can enhance or change this:

  • Ricotta Cheese: Dollops of ricotta stirred in at the end can add an extra creamy dimension.
  • Provolone: A few slices of provolone on top could offer a different melty texture.
  • Asiago: A sprinkle of grated Asiago could add a sharper, nuttier flavor.

This recipe yields a generous amount, making just over 11 cups, with each serving being a little more than a cup. I’ve found it to be an incredibly filling main dish for under 300 calories per serving, and I’m confident you will too! For those tracking with Weight Watchers, this recipe is a fantastic option. Mastering the Skillet: Tips for Success

Achieving the perfect Sausage Tortellini Skillet is straightforward, but a few tips can elevate your dish from good to absolutely incredible.

Sausage Sautéing for Flavor:

When browning the sausage, allow it to cook undisturbed for a few minutes before breaking it up. This creates a beautiful crust and deepens the flavor, adding a richer taste to the overall dish. Ensure it’s cooked through and crumbled evenly to distribute its spicy notes throughout the skillet.

Building a Flavorful Base with Veggies:

The onion, mushrooms, and zucchini aren’t just for texture; they create an aromatic foundation. Sautéing them with the sausage and garlic until softened allows their natural sweetness and earthiness to develop, complementing the robust sausage and vibrant tomato sauce. Don’t rush this step!

The Perfect Sauce Consistency:

The combination of tomato sauce, diced tomatoes, and tomato paste creates a thick, luxurious sauce. The tomato paste is key for intensifying the tomato flavor and adding body. Fresh basil and Italian seasoning infuse the sauce with classic Mediterranean herbs, making every spoonful sing. Ensure everything is well combined before simmering.

Cooking Tortellini Directly in the Sauce:

This is where the one-pan magic truly happens. By cooking the tortellini directly in the sauce, it absorbs all those wonderful flavors, resulting in incredibly tender and savory pasta. Make sure the pan is covered to create steam, which helps cook the tortellini evenly. Simmer gently over low heat to prevent sticking and ensure the tortellini cooks perfectly without becoming mushy.

The Cheesy Melt:

The final touch of mozzarella cheese, sprinkled over the warm skillet and melted under a lid, adds a creamy, irresistible layer that brings the entire dish together. The residual heat from the burner is usually enough to achieve a perfect melt, creating those coveted cheese pulls without overcooking the dish.

Ingredients

  • 1 lb uncooked hot Italian turkey or poultry sausage, casings removed if present
  • 1 small onion, diced
  • 8 oz sliced white mushrooms
  • 8 oz chopped zucchini
  • 2 garlic cloves, minced
  • 15 oz can tomato sauce
  • 15 oz can diced tomatoes
  • ¼ cup tomato paste
  • 2 tablespoons sliced fresh basil
  • 1 ½ teaspoons Italian seasoning
  • ½ teaspoon salt
  • 1 ½ oz Parmesan cheese, freshly shredded (I did mine on the smallest holed side of a box grater)
  • 20 oz refrigerated cheese tortellini
  • 1 cup shredded 2% Mozzarella cheese

Instructions

  • In a large skillet or sauté pan, cook the sausage over medium heat for a few minutes, breaking it apart with a wooden spoon. Once it starts to brown, add the diced onion, sliced mushrooms, chopped zucchini, and minced garlic. Continue cooking for about 8 more minutes, regularly stirring and breaking up the meat, until the sausage is fully cooked through and the vegetables have softened to your liking.
  • Next, incorporate the tomato sauce, canned diced tomatoes, tomato paste, fresh basil, Italian seasoning, salt, and the freshly shredded Parmesan cheese into the skillet. Stir everything together until all ingredients are thoroughly combined and evenly distributed. Add the refrigerated cheese tortellini to the pan and gently stir to coat them in the rich sauce. Cover the pan with a lid, increase the heat slightly until the sauce begins to bubble, then reduce the heat to low. Simmer for 8 minutes, allowing the tortellini to cook through and absorb the delicious flavors of the sauce.
  • Turn off the burner and carefully remove the lid from the skillet. Evenly sprinkle the shredded 2% Mozzarella cheese over the entire surface of the dish. Replace the lid on the pan and let it rest on the warm burner for approximately 2 minutes, or until the Mozzarella cheese has completely melted and become gooey. Remove the lid once the cheese is perfectly melted and serve your irresistible Sausage Tortellini Skillet immediately. Enjoy!
