One of the best aspects of these Brown Sugar Mustard Rubbed Chicken Bites is their incredible versatility when it comes to serving. While they are undeniably delicious enjoyed on their own as a standalone snack or appetizer, their true potential shines when paired with a variety of side dishes. I frequently serve them alongside a crisp, refreshing side salad, fluffy rice, or a medley of roasted or steamed vegetables for a balanced and complete meal.
For a heartier option, consider incorporating them into a vibrant grain bowl featuring quinoa, farro, or brown rice, topped with fresh greens, your favorite veggies, and a light dressing. They also make an excellent filling for wraps or pita pockets, adding a burst of flavor and protein to a quick lunch. My personal go-to for weekday lunches is to make a larger batch and use them throughout the week on top of big, leafy salads. Having prepped chicken bites ready to toss into a salad saves valuable time and ensures a healthy, delicious meal is always at hand. Their robust flavor profile means they pair well with almost anything, allowing for endless customization based on your preferences and what you have in your pantry.
For a refreshing contrast, serve them with a dollop of Greek yogurt mixed with a hint of dill and lemon. Or, for a more indulgent side, consider sweet potato fries or a creamy coleslaw. The possibilities are truly boundless, making this recipe a fantastic foundation for countless meal ideas.
Smart Chicken Preparation: Tips for Delicious, Economical Bites
Achieving perfectly cooked, tender chicken bites starts with how you prepare the chicken itself. I often opt for buying large bulk packs of boneless, skinless chicken breasts from the grocery store. This is not only a cost-effective strategy but also allows for efficient meal preparation for the week ahead. Once home, I use a sharp pair of kitchen shears – which I highly recommend for this task as they are far quicker and easier than a traditional knife (affiliate link) – to trim the larger breasts into 5-6 ounce cutlets for other recipes. All the excess chicken that gets trimmed off is then cut into small, uniform bite-sized pieces, specifically for recipes like these chicken bites.
This method ensures minimal waste and maximizes the utility of your bulk chicken purchase. Once cut, it’s incredibly easy to weigh out 1 pound or 1.5 pounds of these chicken chunks, portion them into quart-sized freezer bags, and freeze them for future use. This way, I always have perfectly prepped chicken on hand, ready to be seasoned and cooked whenever inspiration strikes or a quick meal is needed. Freezing pre-portioned chicken bites not only saves time during busy cooking sessions but also helps to maintain a well-stocked kitchen, making healthy meal planning effortless.

Ingredients
- 1 tablespoon dry mustard powder, (such as Colman’s – found by the spices)
- 2 teaspoons packed brown sugar
- 1 ½ teaspoons paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper, (this adds a subtle kick, increase to ¼ teaspoon if you want it spicier)
- 1 lb raw boneless, skinless chicken breast, cut into small bite-sized pieces
- 1 tablespoon olive oil
Instructions
-
In a small dish, stir together your seasoning mix: mustard powder, brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
-
Place the chicken pieces into a mixing bowl. Add the seasoning mix to the chicken pieces. Stir the contents of the bowl until the chicken pieces are coated with the spices.
-
Add the oil to a large sauté pan/walled skillet and bring over med-high heat. Once the oil is hot, add the chicken pieces (don’t overcrowd the pan) and stir to break them up and coat them in the oil. Cook the chicken for 6-8 minutes, stirring every couple minutes. Once the chicken is cooked through and a bit golden on the outside, remove from heat and serve.
