  • 1 large egg
  • 1 cup unsweetened applesauce
  • ⅓ cup sugar
  • ¼ cup orange juice
  • 1 ½ teaspoon orange zest (about the amount from one orange)
  • 4 tablespoons light butter, melted (I use Land O’Lakes light butter spread with canola oil in the tub)
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon aluminum-free baking powder
  • ½ teaspoon salt
  • 1 ¼ cup halved fresh cranberries, divided

Instructions

  1. Pre-heat the oven to 350 degrees F (175 C). Mist a 9” x 5” loaf pan with cooking spray and set aside.
  2. In a large mixing bowl, combine the egg, applesauce, sugar, orange juice, and orange zest. Stir until all wet ingredients are well combined. Add the melted butter and stir again.
  3. In a separate mixing bowl, whisk together the flour, baking soda, aluminum-free baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined into a smooth batter. Be careful not to overmix. Gently fold in 1 cup of the halved cranberries into the batter.
