  • 1.5 lb uncooked lean and trimmed flank steak

  • *You will also want to have butchers twine/cooking twine on hand , often times you can ask for some at the butcher counter at your grocery store but you can also just buy your own to have on hand. I have this one from Amazon. You can also use toothpicks to seal it shut, but twine is easier.

  • Preheat your oven to 350 degrees Fahrenheit (175°C). Prepare a baking dish by lightly greasing it or lining it with parchment paper if not using an oven-safe skillet.
  • To butterfly your flank steak, carefully slice it horizontally through its thickest part, almost but not entirely through, then open it up like a book. If you’re unsure, ask your butcher to do this for you. Once butterflied, place the steak between two sheets of plastic wrap and pound it with a meat mallet or heavy rolling pin to an even ½-inch thickness. This tenderizes the meat and creates a larger surface for rolling. Season both sides of the butterflied steak evenly with salt, pepper, and dried parsley. Lay the seasoned, butterflied steak flat on a clean cutting board.
  • Heat one teaspoon of olive oil in a large skillet or sauté pan over medium heat. Add the minced garlic and cook, stirring frequently, for 30-60 seconds until it becomes fragrant and lightly golden, being careful not to burn it. Remove the skillet from the heat.
