The beauty of a one-pot meal lies not just in its efficiency but also in its versatility, allowing you to tailor it to your family’s tastes and what’s fresh in your fridge.
Why One-Pot Meals Are a Weeknight Game-Changer
For many home cooks, the thought of extensive cleanup after a delicious meal can be daunting. This is precisely why one-pot recipes like our Creamy Garlic Chicken Pasta are absolute lifesavers. Imagine preparing a full, satisfying dinner—from searing the chicken to simmering the sauce and cooking the pasta—all in a single pot. This drastically reduces the pile of dishes in your sink, giving you more precious time to relax, connect with your family, or simply enjoy the fruits of your labor without the lingering dread of scrubbing pots and pans. It’s not just about convenience; it’s about transforming your cooking experience into something more enjoyable and less stressful.
Beyond the obvious benefit of minimal cleanup, one-pot meals often result in deeper, more integrated flavors. As all the ingredients cook together in one vessel, they meld and infuse their essence into each other, creating a richer and more cohesive taste experience. This specific Creamy Garlic Chicken Pasta benefits immensely from this method, as the garlic, herbs, chicken, and vegetables all contribute to the developing depth of the dairy-free cream sauce. This method also tends to be more efficient with heat distribution, often leading to quicker cooking times overall. It’s smart cooking that delivers exceptional results every time.

Customizing Your One-Pot Creamy Garlic Chicken Pasta
One of the joys of cooking is the freedom to adapt recipes to your liking, and this creamy pasta dish is incredibly versatile. While mushrooms and spinach are fantastic choices, don’t hesitate to experiment with other vegetables. Consider adding vibrant bell peppers for a touch of sweetness and color, or robust chopped broccoli florets for extra crunch and nutrients. Asparagus spears or zucchini rounds would also blend seamlessly into the creamy sauce, offering seasonal variations. The key is to add vegetables that cook relatively quickly or can be softened easily within the one-pot cooking method. For an added layer of flavor, a sprinkle of red pepper flakes can introduce a subtle warmth, while fresh basil or chives can offer a fragrant finish.
For those following specific dietary plans, this recipe is easily adaptable. If you’re on the myWW Purple plan, opting for whole wheat pasta will align perfectly with its guidelines, significantly reducing the SmartPoints. If gluten is a concern, simply swap out traditional pasta for your favorite gluten-free variety. The robust sauce and tender chicken ensure that the dish remains incredibly flavorful, regardless of the pasta choice. This adaptability ensures that everyone can enjoy this delicious and comforting meal, making it a truly inclusive recipe for any household.

Pin Recipe
Ingredients
- 5 tablespoons olive oil, divided
- 1 ½ lbs uncooked boneless skinless chicken breasts, chopped into bite-size pieces
- 8 oz sliced Baby Bella mushrooms (or white mushrooms)
- 4 garlic cloves, minced
- ¼ cup flour
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 ½ cups Almond Breeze Unsweetened almondmilk
- 2 ½ cups reduced sodium nonfat chicken broth
- ½ teaspoon chicken bouillon powder or paste
- ½ teaspoon dried oregano
- 10 oz uncooked pasta (use whole wheat pasta if following the myWW Purple plan)
- 1 tablespoon lemon juice
- 3 cups torn fresh spinach leaves
- 1 tablespoon minced fresh parsley
Instructions
-
In a Dutch oven or other large pot, heat one tablespoon of the olive oil over medium-high heat. When the oil is hot, add the chopped chicken (to avoid overcrowding and ensure proper browning, you may need to cook in two batches) and cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Incorporate the mushrooms and minced garlic into the pot with the chicken. Continue to cook for another 2-3 minutes, stirring, until the mushrooms have softened. Transfer the cooked chicken and mushrooms to a side plate and cover them with aluminum foil to keep warm until ready to use. Discard any remaining liquid or rendered fat in the pot, leaving it ready for the next step.
-
Return the empty pot to medium heat and add the remaining 4 tablespoons of olive oil. Once the oil is hot, gradually whisk in the flour, salt, and black pepper, ensuring a smooth, combined mixture. Continue to whisk for 1-2 minutes to cook out the raw flour taste. Next, slowly whisk in the Almond Breeze Unsweetened Almondmilk, adding it a little at a time, until the sauce is smooth, creamy, and thoroughly combined. Stir in the chicken broth, bouillon powder or paste, and dried oregano. Whisk well, making sure to scrape up any flavorful brown bits that may have developed on the bottom of the pot from cooking the chicken – these bits add tremendous depth to the sauce.
-
Increase the heat to medium-high and bring the sauce to a gentle boil, stirring occasionally. Once boiling, add the uncooked pasta to the pot, ensuring it is submerged in the liquid. Reduce the heat to medium-low and cook uncovered for approximately 10 minutes, or until the pasta is al dente and the sauce has thickened to your desired consistency. Stir every 2 minutes or so during this cooking period to prevent the pasta from sticking to the bottom of the pot and to ensure even cooking.
-
Once the pasta is cooked and the sauce has reached a creamy, thick consistency, reduce the heat to low. Stir in the fresh lemon juice, torn spinach leaves, and the previously reserved cooked chicken and mushrooms. Continue to stir gently until all ingredients are thoroughly combined and heated through, and the spinach has wilted beautifully into the sauce, which usually takes just a few minutes. Garnish generously with freshly minced parsley before serving immediately. Enjoy this comforting and lightened-up meal!
