  • ¼ cup reduced sodium fat free chicken broth
  • 2 oz freshly finely shredded parmesan cheese, divided

  • Cook the wild rice blend according to package instructions (many find a rice cooker convenient for this) using water or broth. Once cooked, set it aside.
  • Pre-heat your oven to 350 degrees Fahrenheit (175°C). Lightly mist a 9×13 inch baking dish with cooking spray to prevent sticking, and then set it aside.
  • In a large sauté pan or deep skillet, drizzle 1 ½ teaspoons of olive oil and heat it over medium-high heat. Once hot, add the bite-sized chopped chicken pieces and season them with a pinch of salt and pepper. Stir the chicken to ensure it’s evenly coated and cook, stirring occasionally, until the chicken is thoroughly cooked through and no longer pink.
